There is a band I think you need to check out, The Rare Occasions. Not only are their songs amazing, but they use all sorts of fun music theory stuff. Unusual time signatures, time changes, key/modulation changes, and usage of modes like locrian and dorian. In particular, this band loves to use 7/4, a lot of their songs use it. Although they don't usually use unusual time signatures throughout the entirety of their songs; they leave 4/4 to the chorus. I would love if you made a video on this band!
