If I'm not mistaken, the egg helps the cream cheese mixture to stay creamy and fluffy while it's baked in the oven. Not sure if you can use an alternative or can leave out the egg, but it's worth a try ;)

I would just look for a recipe with most of the same ingredients that doesn't have to be baked and goes in the refrigerator or freezer to set up instead. It won't have or need an egg.
