What do you use to clean the winshield and also what do you use to protect the winshield

Soap on windows and dry with towel or you could use a quality glass cleaner through Adam’s Polishes, that’s what we use! I would recommend either an SiO2 or ceramic coating for protection on glass. SiO2 is better for short-term more frequent applications in terms of protection! Ceramic coating for more durability and long-term protection!
