I dont think it respawns, but i also dont know what happens if you dont harvest it. 🤔

They can run into you. Bears are more common for that though

Yeah I find bears are more running into you then just running off. But wolves and the sort don't attack often.

I haven't turned missions back on since that stream. But I read there was a bug with that that was supposed to be fixed with one of the recent patches. You might try disabling the mission system, reload the game, enable them again but first head to another reserve then back to NZ. I have had that work on past mission stories.
