One thing I'm not understanding...how can they hang raw meat up and it not get rancid?

It is not raw meat. There is no juice left. They added seasoning n smoked it before hanging. Also as the meat is usually hanged just above the stove, with each day she cooks it will get more n more smoked Its like dried / smoked meat n after few days it will be like the smoked meat u get in supermarket. I m not nepali but have been there n this was what i saw
