This is what SOLD me to this channel. One of her videos on making gourmet treat, which I forgot which one it was (and my first episode of this channel) is what I needed to see in a cooking channel. The frustration, the problem solving, the mistake making, the success. It was real, raw, and relatable. Loved it.

it ruins the crumb, the cake will be dense and gross. if you don't over mix, it'll be fluffier, or crumbly.

The 'what happens if you do it another way' bits are actually brilliant. I've always wondered this stuff but always just read in books 'do it X way'. This showing you why NOT to do it the other way is a great learning aid. Half Sour delivers.

Truee, they are kinda helpful... BUT it is also a waste..¿? They should put another ep(/lesson) to show us what they do with everything else thats left over or went wrong(in general). That could be interesting to see too 😁💙

@@Theknees19 I don't know if you're still waiting on it, but you can make cake pops with them, just easy on the icing in the under-beaten cake and a little more for an over-beaten or over-baked cake. Another option is ice-cream additive or soaking it in a thin compote-like sauce or sweet alcohol sauce to make something more pudding-like.

Evie Cool how did you find the measurements for ingredients? There’s a recipe for coconut cake on the website but it uses different ingredients (all-purpose flour instead of cake, no extracts, only 2 sticks of butter instead of 3, added coconut flakes).

When you prepare food at this level everything is considered. The thinking is probably “the cake is unwieldy and not attractive to eat, which diminishes the experience” I disagree, but I’m also not a Harvard educated pastry chef.

As usual, Claire has provided invaluable information in a wonderfully enjoyable video. I watched the whole series last night and ordered tons of equipment that will arrive tomorrow. Today, in preparation for the birthday cake, I wanted to write down the recipe. Much to my dismay no actual amounts have been provided. That sir is the reason for the video, selling you equipment you don't need to bake a good cake. I'm not being mean just honest. If you happen to get in to bread making I have tons of equipment for that I'll sell. I don't think one item made me a better bread-maker experience did that.

Can you please start including the ingredients in your videos please? I love your videos but sometimes I have to google for the exact same recipe and keep going in between the recipe on the BA website and the video for visual instructions and it’s hard to follow along to bake like that. Also someone said the measurements of the ingredients for the cakes in this video are listed on the streaming channel but the streaming channel isn’t available for people in the EU. Not to sound entitled, it’s just that I’d appreciate it because I really enjoy BA videos and it’s not always easy following along without the measurements there. Sorry if I sound demanding or rude in any way. I don’t mean to.

This is so unfair I’ve been invested all this week in this videos to find today that I cannot find the recipes!!!! The yellow cake recipe on the website uses 6 egg yolks and this one 11! Why do you create a “Baking school” if people cannot practice the recipes!

I believe they are just in parts. I know the yellow cake recipe is on there as well as the white cake and carrot cake (the white cake is cupcakes but it should be the same - although I know the egg count is different). The big difference I saw was the yellow cake was listed under birthday sheet cake and had a chocolate cream cheese frosting instead of the chocolate swiss meringue. Not sure on the others.

LOVE Claire's videos. Just small complaint. Please reference some recipes used ;w; On their website it seems they used the white cupcake recipe for the white cakes. I truly am dissapointed they dont have that detail in there but i imagine one has to increase the cupcake recipe to the desired amount of batter. Going to make my dad a cake for his 65th birthday and am looking forward to trying these out. Just truly wish they made the recipe easier to find.

The section where Claire goes into the lab to highlight overworked and underworked batters is a perfect application of non-digital User Experience Design. Bon Appetit has some really smart people working there.

So I made the coconut caramel cake and these are the ingredient amounts for the cake batter of the cake frosting the cake soak and a cake filling. Also when your making it, make sure that the consistency is similar to the videos in each step. These are the measurements for half the recipient which turned out to be a lot. CAKE BATTER -1 1/2 cup baking flour -3/4 cup sugar -1 tsp baking powder -1 tsp baking soda -pinch of salt -1 stick of butter -tsp of vanilla -3/4 cup butter milk -1/4 cup oil -2 whole eggs plus 3 egg whites COCONUT FILLING -sugar 3/4 cup - 1/4 cup coconut oil -1 cup shredded coconut -1/2 cup heavy cream -pinch of salt COCONUT MILK SOAK -1/2 can coconut milk -1/4 cup sugar -pinch of salt -tsp vanilla COCONUT FROSTING I didn’t use their recipe -1 1/2 cup heavy cream whipped -vanilla -1 can of sweeten condensed milk -toasted coconut for the outside of the cake Hope this helped

You can fully/almost fully assemble lots of cakes with perfect success, they’ll still taste amazing once defrosted. If you have to make a lot of cake for a crowd (and might want to do as much as possible in advance because of a stressful and difficult to coordinate event) it can be a good option. If you want it frosted (as opposed to naked sides) you have to ice it after thawing, but baking it in advance can cut out a lot of work close to the big day!

I watch because im hungry then i realize im lazy and would never do it besides i dont have a mixer or a spatula or two cake pans or money to buy the ingredients xd. But when i did something i just did it by hand and thats why i dont do it anymore because it takes too much time and i hate cooking which is weird because when i was little i used to watch cooking tv shows where they baked a lot of stuff and i actually followed their recipes and did almost all even had a notebook for it and loved it but i got older and went to live alone and i just dont like cooking at all, the less time it takes to cook the better.

In Poland (where I live) a basic birthday cake (and almost every layer cake) is completely different. We bake a tall, super light and fluffy sponge cake with no fat added (plain or cocoa) in a tall cake pan with detachable rim. Then we cut it into 3 or sometimes 4 layers. The filling is usually some kind of whipped cream base, often whipped with mascarpone, and anything else you like (fruit, quite often a jelly layer, coffee, chocolate, carmel, etc.) While assembling, the cake is soaked with something, like lemon water, tea, coffee or any kind of punch you prefere. If anybody was interested 😉

Use a cake pan with a removable bottom and discard all the parchment, oiling and flouring steps, all you have to do is get a thin spatula around and underneath your cake and voila! your cake is perfect no matter what kind it is... I’ve been using this method for ages and it never failed
