I love how the editors have a different style of editing for all the chefs. Brad is pure chaos and gets roasted every 10seconds, Claire is just very wholesome, Chris is professional but also very funny etc

I'll be making my first batch ever of ginger beer. Am a big fan of ginger beer and ginger tea. Don't just throw away the ginger pulp when finished; boil it up with some honey and make it the basis for ginger teas. It keeps for months in the frig and can be added to green, black and other teas; iced or hot. Boil the mash with added water and honey; cool to room temp, and put it in a blender for 10-20 seconds. No need to strain.

Yeah, young ginger would have more of an antimicrobial effect than mature ginger. Young/sprouting plants produce more antioxidants and antimicrobial compounds as a general defense to help the plant stay healthy long enough to grow and mature. That slows down as the plant ages. A more mature ginger root would give you a stronger fermentation process. Also make sure to trim the sprouts down completely, leaving no green.

I love ❤️ fermenting!!! Took some red onion, fennel and garlic. Put some mustard seeds and whole black pepper. Ferment. After fermented and blend a couple big spoon fulls with some jewel dates. This made a little chutney. My Papa 🐻 wow he loved me

Cane sugar is apparently easier to break down. If it's bleached, that is going to cause problems. Pure spring water should also produce better results. Don't expose it to sun either. It's very sensitive.

@@christinamata3405 There is a way of curing egg yolks by burying them whole in a mix of salt and sugar, then they can be grated on pasta etc for an umami kick. But it doesn't look anything like that, and it takes like four days not months.

Important to mention that young ginger isn't the age of the ginger. It's just an entirely different type of ginger. The Thais call it galangal. It's REALLY different. It has its own scent and flavor. And it's crucial to how fragrant a good Tom Yum will end up.

No, young ginger is young ginger, it’s softer and not as spicy as the normal one. The Japanese use theses to make pickled ginger. Galangal is a different one. They are not the same.

Phil The Enthusiast weak in the knees mean we get affected by strong emotions or we end up getting overwhelmed by something really easily. That and all of us tall people really do have bad knees. Growing tall has a price.

First thing with the ginger you washed it so you washed off most of the natural yeast second young ginger is anti microbial. You needed to add a little yeast even just flieschmans

Chlorine in tap water is there to kill bacteria, so that might be one of the reasons to slow fermentation

Add a tbsp of white or cane sugar to the second bottle ferment to boost the carbonation and help develop the flavor. I made ginger beer in Japan with young ginger and it was almost too active. Explosive.
