Chef Lucas is the best. I really enjoy how he emphasizes how complicated some techniques are and then breaks down why the chef is doing what they are doing. It's easy to see something like grilled pork and take for granted how each part of the process is important to achieve the desired texture/tenderness/taste.

Have tried Cantonese BBQ in many Asian countries, including Mainland China. Hong Kong and Macau remain the BEST! That plate of 叉雞飯looks really delicious. 😋Look forward to trying 新桂香 next time. ❤ Bon Appétit !

Looks delicious. Back in the 60s and 70s here in Connecticut, many Chinese restaurants made a dish called Char Siu Ding. How I loved it. Sadly it is no longer made.
