Welcome to a new series on our channel, where we go behind the scenes at restaurants that fascinate us, to learn what goes into bringing us the lovely meals and happy times we enjoy when we eat out. This is the part II, featuring chilli fish, from Ming Room, Trincas Kolkata's Chinese dining room, which opened its doors to the public in 1982.
In this video, the Trincas chefs take us through the process of slicing fresh bhetki fillets to produce even pieces of fish; preparing one of the most crucial components in all Chinese cooking, the stock; prepping the vegetables for even cooking and texture; and finally, frying the fish and finishing it in sauce for a customer order.

This looks incredibly scrumptious! Let me also compliment the way the video has been shot. Some of the snippets look like they were shot in a different era... A 70s vibe. In fact the restaurant itself has a 70s feel. Love it. 💕

I am wondering to open a food channel guys, your channel is my inspiration as always for so long and on. This is not only a food channel for me it's kind of therapy for me..i wanted to share so many things but i know it would going to be a long paragraph, i just couldn't find out where to start and where to stop. But last but not the least i am always a foody and a cook since from my teenage but from your video making it push me to do it in such a way. it's not just a cooking it's a art ..i will give a tribute bong eats on my first video for sure ❤️❤️

After watching the Vlog of Chicken Al A Kiev and Chilly Fish of Trincas I could not resist and decided to go down to Kolkata just to have it. And these dishes made their way to my heart! Absolutely delicious! Thanks for recommending them. I took my friends too and said " @Bong Eats suggested and I'm sure it will be worth it. " And after the food they thanked me for taking them there. We also tried the Lamb Lasagna which was eqaully fantastic. Being a food lover the 3 hours bus journey from Durgapur to Kolkata on the weekend was worth it for all these foods! 😊😍 P.S - The ambience was so lovely with the songs and dim lights! Just perfect setting for any food lovers.

This looks amazingly scrumptious!! Thank you for posting! Amazing videography too! Now if someone can help me with my forever quest of getting the recipe for Trinca style Chinese Chopsuey (Chicken) - and I mean Chinese Chopsuey - the white one and NOT the red one ie American Chopsuey. Would be ever so grateful for a recipe. Have tried experimenting at home several times but have never been able to get it spot on. So any help would be appreciated. Many thanks!

PS - all the recipes posted and shown online are just not right. Either too watery sauce or different veggies or just taste different - and nothing like Trincas. Hence the despair and the request for some insight! Thanks!

Just want to clarify 1 point: The slurry uses corn starch or flour? Generally starch gives us a better result I guess.
