It's so good !! Bordeaux cannelés are so amazing! By their taste and their honeycombed and tender texture! This is one of the best small French cakes! It is very simple to make, you just have to be patient (because the dough must rest 1 night in the fridge). Flavored with rum and vanilla, it is covered with its caramelized crust (which forms during cooking), crispy. Perfect for breakfast, afternoon snack or a changing dessert! The legend says that these little cakes were prepared by nuns to feed the poor. Good tasting !
Ingredients :
500 ml of milk (2 cups)
1 vanilla pod
30 g butter (2 tbsp)
125g flour (1 cup)
200g icing sugar (1¼ cups + 2 tbsp)
2 egg yolks
2 eggs
80 ml black rum or amber rum (1/3 cup)
1 - Milk can be replaced with vegan milk (for those who may be lactose intolerant).
2 - The flour can be replaced by a mixture of half chestnut flour, half rice flour for those who are gluten intolerant.
3 - Butter can be replaced with oil (always for those who may be lactose intolerant).
4 - Using 1 vanilla pod changes everything! If we use vanilla extract, it is no longer the same charm.
5 - The quantity of rum depends on each one. Between 60 to 80 ml is a good proportion.
6 - Some only use yellow ones, I prefer my version :)
7 - I make about 12 cannelés with this recipe.
