Your advocacy about unexpectancy is spot on! Unexpectancy is appealing because it is a sign of genius creativity, which is why it is a rare and tough thing to do in art. Look at AR Rahman's songs for example. Nearly every minute, something unexpected happens in his music that keeps us glued and also makes us listen to them on loop because they don't sound monotonous.
