Never pour out the broth from the meat, it has a lot of flavor! In Ukraine, there is another variation of borscht, when you don't add potatoes, but make mashed potatoes next to it, it's super tasty!

Right??? I make my borshch by slow cooking pork ribs with onion and black pepper until they’re fall off the bone. Strain and chill the liquid so you can remove the fat cap. Julienne the veggies, sauté them, then put in the pork broth with the shredded ribs meat, with bay leaf and whole allspice. Add garlic dill pickle juice for freshness and acidity. Bring to the boil, reduce heat and simmer for as long as you can stand it (usually only 1/2 hour). Serve with fresh dill, smetana (thick sour cream) and black bread. Or, for a summer variation, make a mushroom broth instead of pork, cook as before but serve cold. Super refreshing.

I assume what she did was just doing a quick blanch on the bones which beings all the scum out which gets dumped out and then filled back with water and simmered for hours to get the flavour out of the bones and that liquid would be kept.
