Bosses and Pausing in Elden Ring

Broadly the pausing during a fight thing doesn't seem to change your described scenario. Part of what makes Souls bosses hard is that they are well equipped to kill you, not that they take an hour to finish. You can always just quit to main menu anytime between attempts especially as Elden Ring added the respawn points next to said bosses so you can immediately try again anytime. It took me hours of attempts to beat Malenia in Elden Ring for example but each attempt was never more than ten to fifteen minutes even if I was trying the slowest strategies I could think of. So basically anytime you need to do chores or mix it up you are already equipped to stop within a couple minutes notice and restart at literally moments notice. Also unfortunately Elden Ring has the same RPG elements as the rest of the Souls franchise. Other than just being more open it has the same basic stats, quest structures and such from the older games. Arguably in some ways it has slightly less RPG elements as you have no actual 'factions/covenants' you can join other than just steps along incidental dialog trees.

I understand the formula and how to run the boss tactics. Like i said, it's just a preference where restarting is annoying because every 5 or ten min of a try is wasted I like when i can just pause and take care of things not just during a boss fight. Walking along, i should have the ability to pause if a package arrives or if i need to get a drink. Understandably, this is why i appreciate it, yet don't participate in the genre. It's just a preference of mine and I think its awesome you are super into them and feel differently. Your always welcome to share your opinions and tips.
