Niter will not form until the syrup boils...so as long as you watch it and start your bottling when it is 200° you will be fine because the syrup will cool down a bit as you bottle and it just needs to be at least 185° when you bottle...I hope this helps.

I was told to not raise the temp of the syrup during bottling above 190 degrees F because niter can form again. You said to put it in the bottle at 200 degrees F. What are your thoughts on niter reforming?

Don't you need to sterilize the bottles just before filling while they are still hot? And do the caps have to be sterilized and if so, how?

You do not need to sterilize the new bottles or caps. They should both be completely dry before filling...especially the tops of the bottles and the caps or the cap will not seal properly. Thanks Elaine

@@rothsugarbush4679 Thanks! I got antsy and went ahead before your reply. My bottles and caps had been in the basement, opened, for a few years so I boiled the bottles and put the caps in the hot water briefly. I think I probably won't get a seal. I think the caps and bottles were dry but I also think I may have dribbled syrup on the top of the bottles. I only had a tiny bit so only 2 1/2 8oz bottles. I guess I can just put them in the fridg.!

Thanks for the information. Great video. I have two follow-up questions 1) At around 1:35 in the video, you say that when you're packaging bottles that are 8 oz or greater, you give them space to cool, but at 2:14, you say that you need to bottle stack them to kill the microbial activity. Which option do you prefer? 2) How long would you keep them "stacked"? Thanks

If im not mistaken what he said was for bottles 8oz or smaller stack em close together cuz u dont want for the syrup to cool down to fast.

Do you sterilize (boil) your bottles first? Last year was my first time and I pulled my bottles out of boiling water and filled them right away.

If the bottles are at room temperature you should have no problems filling them with your hot syrup. Thanks Daniel

We sell thousands of them every year...the flip top covers come with a seal inside and the safety covers do not and do not need the seal inside
