Hey Troy! So I spent the last few hours testing and tricking is definitely faster but you should not trick when you are turning because you will not be able to turn as sharply. Also do not trick when mushrooming or going for shortcuts. Edit: I found a lot of other ways to optimize racing so ask if you have any questions :)

Looks like you could use bouncy collision to make players stick to the top half of loops or corkscrews so the whole thing doesn't have to be boosters to keep vehicles from falling off.
