Did an overnight brisket on my recteq 700 and also came out amazing. I wrapped in paper when I woke up and rested in cooler.

Great job I did my first brisket on my bullseye and it came out great as well. So easy... I did wrap in butchers paper for final 5 or 6 hours. And occasionally i spritz so i felt like i did something I can't wait to do another.i do revert starting mine to early i think perfect time is around 8pm-10pm depending on cook temp

I don’t remember exactly but I make it a habit to only buy briskets in the 12 lb range as I find them easier to cook and I have a small family.

Did you let it rest without the oven on? Or, did you set it for like 160 degrees?

My oven was set at 155F.

Pulling at 204-205 then wrapping in foil was the reason for it being overcooked. You should pull it sooner. I wrap at 165-170 to get through the stall and pull at 205/probe tender and let it rest for 2-4 hours. It looks great, nonetheless. Happy Smoking!!!

4:55 I'm new to my bullseye, so I don't have all the hacks, but where is your grate that is halfway in the hopper? Maybe it's further under the pellets than I think, but when you messed with the pellets there I didn't see it.

These were B&B Pellets. I normally use Lumberjack but I couldn’t make it to the store I get them from.

Looks like a great brisket MIke. Go with 8pm because you can rest that thing for just about as long as you want. The pellet grill I have... really enjoying the convince of it. Take care Mike!
