Theres an area to the left as you go under the bridge at Rangariri/Glen Murray heading down the river…..small islands aplenty with shallow water you could follow down till you get to Oputa Swamp off Churchill rd

I've tried cooking koi carp after rinsing it alive in clean water, and the meat, dusted with flour, without, in sugar, smoked, and just haven't succeeded in making it very paletable. Seeing your videos, this one and the hungerian soup make me wanna give it another go.

It was surprisingly good! But in all honesty Koi will never be a staple on the wild table - it does however work very well as bait for ocean fishing!

Milk tenderizes yes, but if you want to get rid of the muddy ''taste, smell'' soak it in clean water and add a teaspoon of spirit vinegar overnight. The fillet also become lighter incolor, it taste amazing no matter how you cook it after that.
