Since it wasn't really possible to cast actual people from the Old West in the film, as none of them (apart from a handful of centenarians who had been infants in the 1880s) were still around, casting actors from Westerns was the next best thing, and worked brilliantly, albeit with the effect of giving the citizens of Hill Valley in 1885 an average age of 60 or over...

Yeah, the miners ate nothing but hot, spicy food every day because of the poisonous gas in the mines that affected their taste. One finishes eating, farts, and then dies and falls over just like Doc on the table. Doc is also in A million ways to die in the west as a cameo, along with the DeLorean.

Used to do that type of 'drunken fall' as a bit part in a show, except I would straight fall to the ground. Many western tribes used cannabis alongside tobacco. That's why they called it a "peace pipe". It wasn't really opposed legally, either. It was a common ingredient in the "patent medicines" that were peddled all over the west, along with stronger drugs.

@DamonNomad82 Contrary to popular belief, Native American tribes could not have possibly used cannabis until the Europeans came. Cannabis is an old world plant, native to the Middle East. So it would not have been available to Native Americans until introduced by Europeans. As far as the peace pipe, Native Americans were known to smoke tobacco in the peace pipe. It is, of course, entirely possible that they smoked other mind-altering substances, but I’ve not heard of any - neither shrooms nor peyote (both used by Native Americans) is smokeable.
