Best pairing that you may love, smoked brisket ( I happened to try this with American wagyu on the Big Joe) and kimchee on the side. The rich fattiness cut with a few types of kimchee had people giggling with joy how good it was. It was two days work, and by the end I just said " I have kimchee,, probably fine to not make anything else", and it was great.

Suggesting an alternative method for cooking these ribs indoors might be welcome. I don't have, nor will I ever have (unless I win the lottery), the great outdoor options you have for grilling. I cook country style pork ribs indoors and they're delicious. Well, just a thought, but I can't be the only one without a big beautiful Traeger like yours.
