1. Ingredients
(1) 500g noodles (handmade noodles are preferred, not too thin, avoid dehydrated noodles, instant noodles, or vermicelli), 350g-500g green beans, 200-250g pork belly with skin
(2) Scallions, ginger, garlic, dark soy sauce, light soy sauce (or homemade Beijing-style fried sauce), salt, sugar, Sichuan peppercorns, star anise, sesame oil, cooking wine, cooking oil, chicken bouillon (MSG)
2. Instructions
(1) Wash the green beans and break them into 3-5cm pieces (or cut them into thin shreds). Slice the pork belly into 3-5mm thick slices.
(2) Chop scallions, mince ginger, and mince garlic, set aside.
(3) Heat oil in a pan, add Sichuan peppercorns and fry until fragrant, then remove them from the oil. Add the pork belly and 1-2 star anise, stir-fry until the pork belly releases some fat and the surface is slightly charred.
(4) Add chopped scallions, minced ginger, and half of the minced garlic, stir-fry briefly, then add a splash of cooking wine.
(5) Add the green beans and stir-fry, then add a small amount of water, chicken bouillon, dark soy sauce, light soy sauce or homemade fried sauce, salt, and a little sugar, mix well.
(6) Add water, ensuring it covers the vegetables. Cover and simmer for about ten minutes.
(7) Transfer a small bowl of vegetable broth, spread the noodles evenly over the vegetables without flipping them, reduce the heat, cover the pot, and simmer.
(8) After five minutes, flip the noodles, evenly pour the vegetable broth over the noodles, cover and continue simmering for 5-8 minutes.
(9) Before serving, sprinkle the remaining half of the minced garlic and a little sesame oil. Turn off the heat, mix the vegetables and noodles evenly, cover the pot, and let it sit for one or two minutes before serving. Serve with a dash of rice vinegar for extra flavor.
