This inspired me to try this and other sunflower recipes like steaming unopened sunflower buds.

That looks really delicious! I've used the unopened buds as food for a long time, but not the fully open flower heads. I'll be trying that, with your recipe. Thanks!

I'm glad I clicked on this video to watch. I really like that the chef used the part of the sunflower I wouldn't immediately think to eat and braised it with simple ingredients. The ricotta filling looks delicious, even the usage of the petals is inventive, and I want to eat the whole dish now!

I have never eaten a sunflower head. Definitely going to try it this year. I found a farm, ready in October. I am planning on getting a few heads. Would like to have some saved for holidays. I am at a loss finding online info. Is it possible to freeze leftover sunflower heads ? Raw vs cooked, and duration. Also do you know the nutritional value of the sunflower head. Cal. Fat. Carbs, fiber, etc. I would appreciate your help. Thank you.

I got to ask, have you ever use very large sunflower heads (12-16") in width and braise or bbq them?

The Jerusalem artichoke is a tuber native to N.A., their flowers are much smaller than true sunflowers which are propagated from seeds ( the ones we like to eat) false sunflower or Jerusalem artichoke is like potatoes and propagated from the choke or tuber. What the chef has is a true sunflower, it's root isn't a Jerusalem artichoke. Nice recipe though!
