I've never heard of a tart with a soft case unless it's come out of the freezer, is not fresh or has not been baked properly. The cream and jam looked very good.

@RiverDanube Interesting, I was thinking it could be that the creme anglaise might have seeped through making the case soft, but yes might not have been baked enough, I can't imagine they were out of the freezer, though I could be wrong. The cream and jam were very good. I definitely think Bread Ahead should use that jam for one of their doughnut flavours. It would be by far their best doughnut if they did😋
