Hey how do we play at 0:58? Since we play 2 strings, but not the one in between, how would I go about doing that

Lightly mute the second string (in-between) with your fretting hand. You can use your index and ring finger to press the first and third string while your middle finger is gently pressing the second string enough to mute it
