Thanks for the info. I've had a couple of Polyscience Professional immersion circulators for about 8 years now and the impeller on one has lately been getting a bit wonky. I was trying to decide whether to try and get it repaired, or just bite the bullet and replace it. Your presentation has convinced me it's time to upgrade.

is the base magnetic like the joules? can you drop it in a metal pot without the clamp?

no, this is a larger commercial type unit that is not meant to be used it a stock pot..

yes, this is silent.. this uses magnetics to spin the impeller.

Is the non-plus model the same thing as the plus model minus the temperature recording? I don't need the temperature recording feature so was wondering if it was worth saving the 100 dollars and going with the cheaper model.

the regular HydroPro does not have the temperature probe or the bluetooth function and that is all. everything else is the same..

Thanks for the reply. Is the temperature probe something that is used in day to day operation? What’s the purpose of the Bluetooth feature? Is it to download the temperature data it records?

@@jaytee6200 the probe would be used daily if used in a foodservice capacity same with the bluetooth function, it is used strictly to download the data logging.

Besides the HAACP stuff that isn't needed for us home gamers one thing the plus model allows for is delta-t cooking which is where your waterbath is hotter than the desired finish temp of the food. It's if you want to speed run cooking an already tender peice of meat. I havent used it thus far because my common use for a circulator is cooking 24-hour "roast" beef and other tougher cuts that need long cooking times.

My Joule died and I have ordered this BIG BEAST!!! I wonder one thing and please let me know your opinion. Would it be for example possible that I cook my potatoes in 90C for 2h, and put pork chop with the probe in, set it to core temp at around 50C, let it rest and it will come up to around 62C or so. Or would you just simply recommend to cook them seperatly?

I think the 90c would be too hot to try the delta-t method as the carryover cooking would be faster and hard to nail...
