Brew a South German Lager

German lagers or pilsners are some of the most drinkable beers on the planet. This is how to brew a German Pils, southern style.
The southern pale lager is defined by its soft water, lighter bitterness and it's aromatic and herbal hops.
This is brewed with White Labs German X Lager yeast WLP 835.
It includes a decoction mash, and a cold lager fermentation schedule, to help with an authentic continental lager taste.

I’ve brewed 2 pilsners in the last year the first time I’ve ever brewed one and not halfway down this keg I’ve ordered some more pilsner malt a great great style indeed. Yours looks beautiful super clear with great lacing love it nice one cheers 👍🍻

It's funny, I was never a fan of pale lager until I started brewing them myself. Now, I try to always have a batch in storage. I don't know if I've just grown an appreciation for them, or maybe I was just drinking bad lager. Love them now... 🍺

Really liked your decoction method in this video, presumably doing such a large volume decoct negates the need to do it multiple times. Did it have any effect on efficiency?

I didn't get any efficiency increase on this, which probably isn't surprising with the well malted modern malts. However, I did a similar full volume decoction on a Czech dark lager just previous to this, which had a proper 20 minute rest at 71c, before the grain boil. That did have a slight increase of 1 or 2 percent efficiency. It definitely would not be worth the time, just for efficiency tho. The full volume decoction certainly saves doing multiple small decoctions tho. Think I'll stick with this method.

Excuse me, but who drinks all the amount of beer you are constantly preparing? You dont look like a beer drinker .

It's a good point, and I guess I'll take that as a compliment :-) My wife and I get through most of it, and we're pretty active re-building our house. But you know how it is, friends come to visit, family come to visit... Next thing you know, you're out of beer again....
