the problem with coconut is you have to add so much to get any noticeable flavor that the residual oils really hinder the head on the finished beer. I made a coconut chocolate coffee porter a few years ago,attempting a clone of "Last Snow" . 5 gallon batch and i used almost 5 lbs of toasted unsweetened coconut . Its a really good beer but it still doesnt have enough coconut flavor as one would think it should have.

Compensate with sabro and talus! Alone they won't be true coconut and it'll be obvious, but they can amplify and complement the real toasted coconut without that negative side effect. Wiper and True here in the UK did a 7.5% coconut stout and it definitely and a thick head on it. Furthermore, imperial strength, ie in or near double digits, generally lack head anyway.
