There is at least one GTA-like RP community in MP already (called KNOX) that plays a while before apocalypse so you can get a job, live a normal life, etc before it comes crashing down. I was (and still am) a cop in last iteration. They did a nice job showcasing the apocalypse. They are in a new iteration now and I'm a cop again (continuing after reset). Can't wait to see it fall again.

You can. Cops make money by killing bandits, mechanic by repairing cars, doctor/nurse by healing injured NPCs, lumberjack by placing chopped logs into certain containers etc
