Jimin-ssi means Mister-Jimin (the suffix ssi after names is used to show respect). Jungkook uses it more like a tease and he doesn't uses it for all the older members, he's just playful with Jiminie.

Doe eyed = the wide open eyed "innocent" or "naive" look of endearment. The "ssi" or "shi" tacked at the end of the name is a another way to address someone with more respect/fondness/endearment, it isn't just Jimin though haha .. you will sometimes hear the ah attached at the end of a name too Jin is always saying "jungkook-ah"

Doe eyes - when someone eyes get really big. It comes from deer having big eyes and female deer are called Doe. Adding "-ssi" at the end of a name, like Jimin-ssi, is calling the guy Mr. So in English it's Mr. Jimin, but in Korean it's Jimin-ssi. Jungkook always calls Jimin "Jimin-ssi" instead of calling Jimin "hyung", but it also makes Jimin laugh

Close friends dont call each other ssi. ssi is equivalent to the english mr, mrs, miss.

Doe eyes - comes from a baby deer which is called a "doe" they have very large rounds eyes. That's where Doe eyes come from, they're saying he has very large & round eyes, they're so associated with those with youthful eyes. Also "-ssi" or "- 씨" when JK calls Jimin 지민씨 or Jimin-ssi means Mr. In English , so JK is saying "Mr. Jimin"

The Ssi in Jimin-ssi is an honorific method of address in Korean. It's kind of a general form of saying Mr., Miss, Mrs. in Korea. In Hangul it is spelled 씨 with a hard sh- sound like in she combined with the e sound like in see. Kind of sounds like the english word She when you really think about it. Example: My name is Erin so someone would call me Erin-ssi or in Hangul it would be written as 에린씨... or Mr. Erin (even if I am girl...lol)
