You add flour without any fat (usually butter) to mix with it to help thicken the gravy? I was always taught that flour goes with butter every time in sauces and gravy
@pendragon2012 Жыл бұрын
@@andrews278 It probably depends on what recipe. In the one I use you put the flour in with the sausage once its cooked to absorb the fat and create a binding agent for the gravy. Texas grandpa here. i have been either helping in the kitchen, or running it for about 70 years. here are my recipe/method for Biscuits and Gravy. i made these Biscuits for my granny, and my grandkids, so 5 generations of family so far. and they have always been welcome at the table. they are not the "world's best" but i think they hold their own against most other recipes. but considering ease to make, robustness of the recipe, availability of ingredients, and the taste of the outcome, it is pretty damn good. because gravy has so many variables in making, i don't and have never had a definitive recipe, but a method. honestly, these are so easy to make, i don't know why anyone would use a packet. if you choose to make these, i hope you enjoy them. Papa Grim's Badass Biscuits 2-1/2 c flour (cake flour preferred) 1 T baking powder (NOT baking soda) 1/4 t baking soda (NOT baking powder) 1/2 t salt (can be cut in half) 1/3 c liquid fat (veg oil, melted lard or drippins, etc) 3/4 c milk or cream (slightly sour milk is OK) preheat oven to 450f blend all dry ingredients blend all wet ingredients mix wet into dry only enough to bring them together. DO NOT OVERMIX! drop fat golf balls with 2 spoons, or roll & cut (personally, i prefer drop Biscuits) bake 10 to 12 minutes ===== METRIC UNITS : 600 ml flour 15 ml baking powder 1.5 ml baking soda 3 ml salt 80 ml liquid fat 180 ml milk oven at 230c for Gravy : throw some seasoned loose pork breakfast sausage into a pan (for more Gravy, add a little Drippins/oil to the pan) cook it until it's about 2/3 done and break it into small bite-sized pieces slowly add flour to the pan until it coats all the meat bits and the pan is starting to think about drying up stir constantly until the flour starts losing it's "raw" smell turn the heat down to LOW any oil+flour in the pan should be really thick, breaking up when stirred, but liquid when left alone start stirring constantly and begin adding cream and/or sweet milk until the sausage bits are just barely covered keep stirring keep stirring keep stirring some more as the Gravy starts to thicken, adjust the salt and pepper to your liking when you think that maybe you've added too much pepper, give it 4 more grinds keep stirring when the Gravy is nearly as thick as you want it, take it off the heat the Gravy will thicken just a bit more after it's off the stove this Gravy is good on Biscuits, chicken fried steak, mashed potatoes, and many other things. personally, i've never seen it happen, but i have heard there is sometimes leftover Gravy. if there happens to be some left over, it should be put into the fridge, covered. if you want my spice mix for breakfast sausage, just net me know, and i will post it here for you. it is for 2 pounds (900 g) of loose ground pork. just make the blend, and then freeze whatever you don't use. A NOTE ON "DRIPPINS" Drippins is the FAT (not liquids!) left over after cooking bacon (or sometimes a really good ham). this substance is kept either in the refrigerator if not much is produced and used, or near the stove if you have a good rotating supply. this stuff is jealously kept, lovingly dispensed, and joyously consumed with such diverse things as cooked vegetables, beans, wilted spinach greens, as a component of some salad dressings, in/on burgers, roasts, chops, etc. if you go into a functioning Southern kitchen, you will find Drippins.

Great job on the biscuits (soft on the inside) ! Pepper in the gravy is usually a matter left to taste, when making homemade sausage gravy, you can add the amount of pepper you like. We usually like to taste the pepper, but not so much as it takes away from the taste of sausage. Homemade gravy is easy, just get some minced pork sausage (1 pound), fry it until it’s a brown color, remove sausage, keeping the fat in the pan add 4 Tablespoons of butter cook about 1 to 2 minutes getting the fat warm( and your flour (1/4 cup) to the pan, cook the flour until it’s a caramel color whisking constantly , gradually whisk in milk (2 and 1/3 cups) add seasonings, 1/2 tsp both of salt and pepper. Cook til thick, you can add more milk if you think it’s to thick, or for reheating. We like to add about a tablespoon of opinion powder to ours, that’s optional, it you like Spicy, you can add a little ground red pepper. Season to taste, add what you like ❤

We call those biscuits drop biscuits or spoon biscuits because you're meant to spoon them onto the pan rather than roll them out like traditional biscuits. But I can't ever be bothered to roll out biscuits so I do drop biscuits myself. The gravy is fine! You don't have to have sausage. It's traditional to be made with sausage or bacon drippings and then instead of water it's made with milk or cream. In the packet you used it's got powdered milk, and honestly for packets it's not very far from scratch made. And yes white gravy is meant to be peppery, some people even call it black pepper gravy! That said if you wanted to try making it all from scratch I'm certain you can find the ingredients it's mainly flour and milk for both lol

So happy to see you enjoy this. I've made sausage and biscuits for about 70 years now. Biscuits will raise to about double in size and be soft and fluffy in the center and crunchy on the outside. When I first watched my mother make them, her advice was "Stir, knead, and roll them out with gentle hands." To make sausage gravy, I first brown the sausage, breaking up the clumps, until it's done. Add flour and stir it into the sausage, cook until the flour is slightly browned (adds flavor to the gravy); while stirring, add milk, salt and pepper, to taste. Continue stirring until thickened. Great video! Biscuits and Sausage Gravy are a favorite of mine and you did a wonderful job fixing both! No need for extra sausage in the gravy unless you want to add that ... I don't ... I use the same mixes you used and it's always on point! I sometimes get a bit lazier and use the canned biscuits that fluff up or even the 'homemade frozen' style, because life can be busy! GOOD JOB Y'ALL! 😊

Being a Native Texan, I've been eating biscuits and gravy my whole life. I'm not very good at making it from scatch but the first 18 years of my life that's the only way I got it and I sure miss it. Glad you enjoyed it.

My Brit wife and her family in the East Midlands say gravy should not be served for breakfast and gravy should not be white (they also say it looks gray) and they wont to try it. She has giving me a taste of Bovril which is definitely a different tastes and smell to this. Bovril is like a paste version of our beef bullion cubes. It's way strong. It's like popping 4 beef cubes in your mouth and start chewing. Eek!

If you fry some breakfast sausage and add butter and flour and fry until the flour becomes a roux, then add milk to the right consistency. You can add as much or as little seasonings you like. (The not quick technique) lol

Biscuits and gravy are best made from scratch at home. The packaged mixes are good but homemade is marvelous! You control the amounts of spice to your taste.

So funny, I always shake black pepper on my biscuits and gravy. That's pre-mixed so probably pretty good, but I know in restaurants, they often put little pieces of sausage in it and it tastes great that way too. I'm glad you guys liked it! One of my favorites for breakfast instead of toast! (editing this: I just saw your Beesley post from a few hours ago. No you did good--prepackaged is best to just follow the instructions I think)

To make sausage gravy, you literally just add a bit of flour to a frying pan full of fried up sausage, stir it up until it starts to get pasty and then add milk until you get a gravy-like appearance. Add milk until you get the consistency you want..from chunky to runny.

The quality of the sausage in the gravy is key, it isn't just about black pepper. You might also try half-and-half as the base instead of plain milk.

Awww! That’s awesome that y’all tried your first biscuits and gravy. But inside I was like…. No no no no no! Not instant biscuits and gravy. But I understand that that’s probably what y’all have available. I wish I could crawl through the screen and fix y’all a proper homemade southern style biscuits and gravy with actual sausage. But… it is what it is. Y’all can try when ya come to the states. You’ll see just how much more better it is. To be honest… real biscuits and gravy is so easy to make. Really easy. I’ve seen this guy from Australia make his own homemade biscuits and gravy. I think y’all can too. But anyhoo… I’m glad y’all liked it. I can wait till y’all come to the states. ❤❤

Good luck in the next month and a half and I hope everything goes smoothly when the big day comes. Being a parent is completely unlike anything else you've ever done in life - it's amazing and terrifying and difficult and rewarding all at once. People say things like that and folks with no kids nod and smile. You'll see what I mean in a few weeks. 🙂

We have a tradition in our house. On the first day of deer hunting my husband makes biscuits and gravy . He uses the same gravy mix but he fries up a pound of sausage and puts it in the gravy it's sooo good . To make it easier we use grands biscuits they come in a tube lol. It just makes it easier and quicker they are delicious biscuits. We use them because as I said it's quicker so he can get out in his deer stand early because you can start hunting at dawn when it's light so you can see and see the blaze orange of other hunters that may be around you.

The gravy would be better if it was made from scratch and not a mix. Also you can salt & pepper to taste. On similar note, whenever you do travel, avoid the big chain restaurants. You'll get better food and quality at a "mom and pop". I always enjoy your videos. Keep it up and good luck with baby.

There are a few gravies that fall into the milk based gravy. The country gravy without sausage is peppery, like you have. Then there is sausage gravy with chunks of sausage. Both are fine with biscuits. The biscuit mix you have are what are called drop biscuits. They work, it's all good.

If you want to make sausage gravy from scratch the hardest part would be finding American breakfast sausage. Unless Brexit changed something then the import of any American meat product into the UK has been banned since the UK joined the EU. You could make American breakfast sausage or do what my mom did when we lived there which is to use the sausage meat from Cumberland sausages and add a bit more dry sage and some pepper flakes (cayenne) In the 80s and 90s in London we could find Jimmy Dean brand breakfast sausage but it was stupid expensive. So mom found a way to doctor up what was available there and it's pretty close to the real thing. Just in case y'all didn't know, our breakfast sausage doesn't come in a casing or outer skin. It comes in a tube and it's removed from the package, cut into rounds then pan fried or cooked in the oven. They look kind of like black pudding when they're cooked but they have very very different tastes.

Good job! If you ever make it to the south you will get real biscuits and gravy, it is heaven! Milly you look great and are going to make a great mother!!

Needs more gravy. It's a good idea to cut the biscuit through the middle, lay both halves flat on the plate, then smother in gravy. Some people tear the biscuit into chunks for an even better contact with the gravy. Gravy is easy, don't need a mix.

Every couple has to start somewhere, so use what you have on hand and buy the fancy equipment as needed or wanted. ;) Though I have the fancy equipment, like you, I rarely use my oven any more. I have a countertop convection toaster oven that I use for most of my cooking. :)
