When you watch his videos he usually has a link to the recipe if you plan to cook indoors with a regular stove and oven. I do recommebpnd that for your own usetoget a cast iron skillet and dutch oven. They will prove to be indespensible for you if youdo any cooking. Plus they are so versatile.

True facts! I’m a Latino man and that is what I fry up my beans with. I’ll get a can of Goya pinto beans or Goya black beans, drain them and then fry them up in some bacon grease with some onions and garlic. Mash them up and roll them up into my flower tortilla with some pico. You go ahead and try it. Talk about good? It’s so good your tongue will slap your brains out. Howdy from Texas! 🤠

Cowboy Kent is an American treasure ❤ I agree that you should use bacon grease or sausage Grease instead of butter. It's just extra flavor and your pan is already going to be dirty with one or the other. I fully encourage you to try to make these at home. It's really easy and definitely worth the effort! 🤠😁🤘

Amen! Butter won't be nearly as tasty! Be sure to salt your flour heavily while you're browning it. Don't wait and add it when the gravy is done, it won't work then. I don't know why it doesn't work if you don't add the salt when the flour is browning but I've been making biscuits and gravy since I was 18 and I'm 56 now, I know what I'm talking about Oh and BTW the lady is his wife! 😊

I usually use the sausage grease from browning the sausage! Not quite as good as bacon grease, but I don't cook enough bacon to have it on hand, and the sausage grease is already in the pan!

🤠 Cast Iron is used over fire or on coals because of durability and heat retention. What you bake with is called a "dutch oven". The lid is made with a lip so you can pile coals on top and cook from the top and bottom at the same time (like an oven). Cooked over campfires with cast iron since i was 12.

I am 85 years old and I was raised by southern parents, I have learned practically all the southern dishes you see on KZbin. Here's a few explanations: white gravy was always called milk gravy and it was made from the drippings of fried meat, usually bacon, sausage and pork chops. You just remove the meat from the pan, stir in enough flour to make a slurry. stir for 2 t0 3 minutes for the flour to cook and then add milk stirring constantly to remove the lumps. When it is the thickness you want add salt and pepper. If it is too thin or too thick add small amounts of either flour or milk until it is the right consistency. If you are planning on making biscuits and gravy here's a few short cuts and it will still be just as good. Make your biscuits with Bisquick, look it up on line and it will give you all the info you need, don't use it for the gravy. Also, after the sausage is done you can just add enough flour directly to the pan to thoroughly coat the sausage and absorb the drippins, stir it for a few minutes until the flour is cooked and then just add milk in small amounts while stirring until it is the right thickness and then add the seasoning. This method only uses one pan and takes about 20 to 30 minutes from start to finish. Good luck and enjoy no matter what method you use. Jean Damrel

I agree Bisquick is a "Shortcut", I just take after my mother. Back when I was a kid she always bought it and used it for pancakes and biscuits. However one day she happened to look at the ingredients and it hit her. She was paying for someone to pre-mix things she already had in her kitchen. From that day forward the Bisquick stayed at the store. :)

Buttermilk is the liquid left over from churning cream into butter. It's allowed to ferment a bit [something like yogurt]. Some recipes will allow plain white yogurt to sub for buttermilk.

That's the original buttermilk. Nowadays the "buttermilk" you buy in stores is cultured milk. The lemon juice in milk trick works just as well for something like this where you need the acidity, but not the flavor.

FYI, the all-purpose flour in the US is not the same as the plain flour that you get in the UK. There is a difference in the protein content and it will make a difference in how your biscuits turn out so you might need to make an Amazon order. Mrs. H over at Mr. H and Friends found that out. They were here and did a video meet up with Cowboy Kent back at the beginning of summer but when she got back home to try and re-create the 2 ingredient biscuits with self-raising (self-rising in the US) flour, they were flat. We all started wondering if flour was different and it is. Buttermilk you can find in the UK but not all the time.

For the buttermilk, you could just make homemade butter to get your buttermilk. It'll add to the cost but you can use your homemade butter in the biscuits.

I will say this. Our breakfast sausage usually cones preseasoned with spices. So if you do make it and all you can find is plain ground sausage, then you might want to look up the spices that are normally mixed into our ground breakfast sausage.

USE BACON GREASE!!!! I cook mainly with bacon grease, butter, and some olive oil here and there. Believe me using bacon grease instead of butter makes a BIG difference. I always take a couple scoops out of my bacon grease container and fry my green beans in it with pepper, a pinch of salt, a bit of garlic powder. Then hit it with a little soy sauce and once they’ve cooked til a handful are starting to crinkle, I either eat it then or I throw in a bit of brown sugar and let it go 3 or 4 more minutes.

I don’t think he can use bacon grease. Their bacon is not the same as our bacon. Closest thing to our bacon they’ve got is something called rashers. American bacon comes from the pork belly. Bacon comes from the back. Different consistency. And they cure it different so the grease is gonna taste different.

He did an amazing job with explaining how to do gravy. It is so so important to add your flour a little bit at a time and then your milk a little bit at a time. A lot of people try to rush it and put all their flour in at once and then it gets lumpy and you get just bits of flour when you take a bite. If you don’t have a spatula like he had, you can use a whisk or wooden spoon. Make sure to stir out those lumps really good before you add any more flour or milk.

This kind of white gravy is basically a French béchamel sauce with small pieces of sausage-seasoned ground pork in it. I think more Europeans would understand that description better than just calling it white gravy? Also, buttermilk is literally just the milk left over from making butter. White gravy is super easy to make, as the video shows, & it's very tasty.

You can cook it with the sausage. I don't remove the sausage. The key is to introduce the milk a little at a time and each time let it come back to a boil before you add more milk. Don't make it too thick or it will be dry. Remember, the biscuits will absorb some of the gravy.

I have grown up with homemade bisquits and gravy. Kent is in deed a great man with wonderful recipes, after all he is a chuck wagon cook and has to feed many hungry cowboys. I am from the US but have also lived in the UK for over a decade and man I missed my bisquits and gravy while there. The only thing my family does different is we add cooked scrambled eggs to the gravy when we add in the sausage! YUMMY! Yes plain flour is a different blend than our all purpose flour but it can work with some tweaking, the main problem isn't the flour, it is the sausage. You do not have proper breakfast/sage sausage in the UK. I made my own while I lived there. If you want it right you need to make your own sausage, also the white gravy{ no Sausage } is what we put on southern fried steaks and fried chicken, and mashed potatoes

Everyone needs to subscribe to Kent's Channel. He makes the best video's ever! Love watching Kent Rollins. Buscuits and gravy is an amazing comfort food, so so good. You've got to try it! I make mine a little different. I cook the meat, turn the fire down for a bit, then sprinkle the flour on the meat, stir it up, add my spices, poor in a little milk, turn the fire back up, and just keep adding milk every time it comes to a boil until it's at the right consistancy. I poor my bacon grease into silicone cup cake holders, stick them in the freezer until they get hard, pop them out, and then put them in a plastic bag, and back in the freezer. If I need some to fry some eggs or whatever, I just grab one out of the freezer. They'll last for years that way. If I'm making something that calls for bacon and I don't have any I just use some bacon grease.

You could totally make your own biscuit and gravy. I grew up in Texas, but live in Canada currently. Nobody here eats biscuits and gravy, so I make my own. The key is good breakfast sausage. And don’t use butter to make the gravy. If you can’t get streaky bacon (I think that’s what you call it in the UK), then add some lard to your sausage. Butter is just not the same.

I make biscuits and gravy too but I cheat and just get the biscuits like Pillsbury. All you have to do is pop them in the oven and they’re done in about 15 minutes. Then make the sausage and gravy…pretty easy peasy. Good one Adam!

I personally tear my biscuits into bite size pieces and then pour gravy on top that way you know 100% you are getting gravy on the inside and outside of the biscuits, but if I don't feel like it...I will split a biscuit and pour gravy.

Adam. Big fan of yours. I've been a fan of Kent's channel for nearly 3 years now and he is a Godsend to the KZbin cooks. He is very wholesome and genuine, but most importantly he's extremely humble and comes from humble beginnings. Kent has been on quite a few American cooking shows such as Beat Bobby Flay, Chopped, and Throwdown with Bobby Flay to name a few. He was also a contestant on the Netflix series Great BBQ Showdown, so he definitely knows his way around the kitchen. In terms of Biscuits and Gravy, just remember to convert Imperial to Metric or else you will end up messing up biscuits...and this includes making the Sausage Gravy. Not sure if you guys have bulk sausage or not, but you can definitely use UK sausage (bangers) but just remember to remove the sausage casing before browning the sausage. When making the gravy (butter/grease+flour) some people like myself just leave the sausage in there with the grease and just add flour and milk, but most will remove the sausage first, make their gravy, then add it back...both ways work, just remember to keep stirring on LOW Heat while slowly pouring the milk. Once you get the consistency you like (I personally like a slightly thick gravy) add TONS of Black Pepper...you can never have too much pepper in White/Sausage Gravy. For Biscuits, definitely follow his recipe but convert the measurements to Metric so that you don't mess up your biscuits. He uses a Dutch Oven, but you can set your oven to 350 F (176 C) and bake until Golden Brown. If you are unsure if they are done or not, you can either take a toothpick and stab each biscuit OR you can break one apart and eat it to see if it's still doughy. When pouring the gravy over the biscuits, I recommend you split the biscuits in half BUT you can do what I do and just tear the biscuit up into bite size pieces and pour gravy over it...just don't pour gravy over whole (not split) biscuits b/c you are shorting yourself of a good meal. Either way, Follow his recipe but use Metric instead of Imperial measurements. You will not be disappointed.

A good trick to have bacon grease on hand, is to bake your bacon on an oven safe tray with side walls, underneath a metal rack that has holes. (Best way I can describe that.) This will allow the grease to puddle together at the bottom, so you can pour it into a glass jar once the bacon is cooked, before it cools down and solidifies, and store it. We store ours in the fridge, so it’ll keep longer.

It puzzles me why both the Brits and the Irish don’t make biscuits and gravy every day. It baffles me! It’s the PERFECT dish for those countries. Every single ingredient they can get at Tesco or Asda. Yes, biscuits are an art but the Brits and Irish are gifted folk. They’d catch on after a couple tries. I’ve never ever seen a Brit not wet their shorts after eating BNG for the first time but for the life of me, I can’t figure out why this hasn’t caught on.

It's funny b/c Americans have adopted some British and Irish cuisines in the states, but they can't do ours? The same thing with American BBQ, they can literally use a standard BBQ/smoker and make any style BBQ if they just took the time to learn. And when following American recipes, all they got to do is convert to their Metric system and they can make anything we do lol. If they can make American Burgers, they can make Biscuits and Gravy.

they dont sell breakfast suasage in the UK, you will have to make your own using online recipe. Just buy ground pork and add the spices then you can follow the recipe for sausage gravy

Kent Rollins is a national treasure. His story is pretty amazing. Shan is his wife and that story is good too. I know you can do this, but if you do, use the bacon grease for the gravy...trust me...Looking forward to seeing the video!

White gravy can be incredibly variable based on its roux base (yes, that's how it's spelled, not my fault). I highly suggest you experiment with the roux a little to find out your own preference, and then add the rest of the ingredients.

My mother-in-law was born and raised in Louisiana. She made biscuits by hand. All the dry ingredients went on a large pastry board. She made a large pile, with a well (looked like a small crater) in the dry ingredients. Broke a couple of eggs into the indentation, poured some buttermilk in that crater and hand mixed and formed each one. Put them into cast iron pans and baked them that way. While baking, she made the sausage gravy. It was fabulous. In addition, if someone wasn't a big fan of the gravy, she always had home made apple butter or other jams/jellies that could be used. You could also have them with a chocolate syrup as a dessert. The best memory of my mother in law

Adam, the gravy is simple at home. Brown a pound of spicy breakfast sausage in a frying pan. Drain a little excess grease. Add about tablespoons of flour and salt and pepper until you cant seethe flour anymore. Slowly add milk and bit at a time till it’s bubbling. Keep adding until you get a nice thick gravy. So simple and delicious! You can just use canned biscuits to save time. Enjoy! ❤

White gravy is a cream gravy that is usually made using fat from frying pork product in a pan/skillet and mixing in cream and a thickening agent such as flour and/or cornstarch.

The way I do white gravy is I book bacon and pork sausage and use the grease from that. I also use heavy cream and milk. The heavy cream allows you to use less flour to thicken it up because I don't like a lot of flour in my gravy. You brown the flour in the grease, then had the milk and cream then you add the cooked bacon and sausage and bring everything to temperature and let it thicken. You should also taste the gravy regularly to see if you need salt. I don't add much salt because the bacon adds enough, IMO but some might want more. Add black pepper once all the ingredients are in

Alternate Gravy Recipe if you're interested Cook a Tube of ground sausage in pan, add some butter if it's lean or if you just want more gravy or just that butter flavor. Add in a 1/4 cup flour after the meat is browned and chopped using the edge of the spatula. Mix the flour with the meat and some black pepper and let it cook a minute so the flour looses some of that flour taste and absorbs all that sausage grease and butter flavor. Add 1/2 cup of milk and stir, let cook a few moments and then take it off the heat and add another 1/2 cup milk. From here add as much milk as you want to get to the consistency you enjoy because some people like it more like a paste (a few people) and some like it watery. Personally I like it at about 2 cups but I stop measuring after the first cup and play it by experience.

My mom taught me her sausage gravy recipe and I use butter and cook the sausage first then use the sausage grease along with the butter with some flour to start my roux. Once the flour is cooked I start incorporating my milk and flour a bit at a time along with salt and pepper until it reaches the right consistency.

You don’t actually need all of those ingredients to get delicious biscuits. You can do it with just self rising flour, butter, buttermilk. You can substitute the butter with lard. The very best cooks don’t even measure out the ingredients and still get light and flaky biscuits.

My go-to recipe for drop biscuits is just butter, baking powder, flour, salt, and milk. That trick with the pastry knife and crumbly butter is 100% key to the best biscuits.

I don't know if it's the same in the UK, but we have breakfast sausage which tends to be similar all around the US some like lots of sage others don't. The great thing is if you get ground pork you can make yours too your own tastes. You might like to try this one. If you like more heat add more chili/pepper flakes. Sample recipe. Regular (Plain) 16 ounces ground pork 3/4 teaspoon salt 1/2 teaspoon dried parsley 1/4 teaspoon ground sage 1/4 teaspoon ground black pepper 1/4 teaspoon dried thyme 1/4 teaspoon crushed red pepper 1/4 teaspoon ground coriander 1/2 teaspoon MSG (such as Accent Flavor Enhancer) Biscuits and gravy has always been my go to comfort food with an over easy egg on top. Mmmmm mmmmmm good!

I know you know the Mr. H and Friends you tube channel..... you need to do a reaction video of Cowboy Kent cooking with Mr. H and Friends when they went to Oklahoma, I believe it was earlier this year. Here's the title: "KENT ROLLINS Shows Brits Outdoor Cooking" ... just copy and paste that title into the you tube search bar, it should come up... I know you will appreciate this video even more. Cowboy Kent used to be a cowboy years ago, started out when he was a teenager..... now he does these videos and his recipes. American foodie from the deep south here. Country gravy is just a béchamel sauce made with grease from ground breakfast sausage instead of butter. It's seasoned heavily with pepper and the cooked sausage. Old school biscuits are made with lard, but you can make it with butter. Both ways are delicious.

My favorite meal ever, I could eat this every day ❤! I put my gravy on biscuits and potatoes. You can use a juice glass for cutting out the biscuits as well. I really enjoy watching him cook. Of course, I'm so hungry now! I love other people's reactions to our foods!

Hahaha cowboy Kent is amazing has wonderful recipes! He is a cook for a real ranch. So he uses the outdoor kitchen but you make these in your oven. He is in Oklahoma

When I was in Boy Scouts, we had a peach cobbler cook off using a Dutch oven like that. We won first place. Everyone else's was either burnt or still raw. 😂 The judges and other participants lined up to get ours.

It would be great if you do this for a video, but, you actually have to cook them for your family first. No time for video making when you cook these. It is a filling, fight off the winter time coldness, wholesome meal. And you must eat it while they are hot and fresh from the pan! Only then will you appreciate just how good this can be. I will not disparage your mother's. But this can be the dish you server that your child and family guests will remember fondly, as you may have your favorite meal of your mothers. One tip, Kent referred to using bacon grease or butter for the rue that starts the gravy. You can also use the grease from the sausage as part of your rue just to really bump the flavor up. i believe this must have a lot of black pepper , but that is just my taste.

In case your intimidated by the biscuit recipe, you can use 2 cups self-raising flour and 2 cups if heavy cream and that's it. Knead the dough, roll it out, bake in the oven until golden brown. Easy.

Use biscuits for strawberry shortcake in summer. Biscuits are good with any meal. You can have soup and biscuits for a nutritious and economical supper.
