My mom was dying of cancer that had settled into her bones and she was on hospice. We brought some Wendy's fires and chocolate frosty into her room. We told her to dip the fires in the frosty. She tried it and got the biggest smile on her face, one of the last times I saw her smile. I will always remember that.

Ahh. Memories. After two years of working grills, pos, drive-thru and such, I finally got the overnight shift at Wendy's. This was back around 1984. I'd just gotten out of high school and was starting my career schooling in September. So this was likely June of '84. All of our meat was stored in an outdoor cooler. It wasn't allowed to be put in the freezer - that's where 50+ bags of fries were stored. I'd pull out the bags of meat ( I think they were about 40 lbs each) and would set them up on my prep table. I'd bring out the Holly - that's the machine that turned the meat into square patties. Put it in the middle of the prep room and feed the pan on top with a bag of beef. I'd also slip in stacks of wax paper to use as dividers between each patty. The unit ran smooth. Patties would kick out every 3 seconds or so with a wax paper bottom. If one slipped or didn't have a bottom, I'd pull it and dump it back into the hopper. The square patties were simply a symbol of differentiating Wendy's burgers from the rest. The meat was better than most fast food establishments back then and I'm pretty sure it's the same now. I'd stack the patties in groups of 36, bag them, tag them with a date and put them into the walk-in cooler that was used for daily resources. There were things like salad bar items, cheese, etc in there. My typical night would be to produce 720 patties. The patties would then be used by the cooks on a a made-to-order basis. Any patties on the grill that surpassed its expiration time (approx 10-15 minutes) would be sent down the sleeve and into a collection bucket. That bucket - at least where I worked - wasn't to exceed 10 patties on a given night. But even if it was, they weren't wasted. Every single piece of meat that expired on the grill was saved, boiled and put into the cooler. These were the meat that would be used for the chili. Smart move - turn almost waste into a quality substance that can be reimagined. So, Wendy's chili is actually made of (at least this is how it was in the 80s & 90s) overcooked meat, that was later boiled to remove any bacteria & stored in bags in the cooler. We'd take a bag out of the cooler, add in a 10 lb can of chili seasoning and tomatoes, and we've got chili. It was already a huge hit back then, but potatoes became a healthy option for Wendy's and for some who wanted to partially cheat, they could lower their caloric intake by buying a potato, but adding flavor and protien with chili on top - maybe even with cheese. As a go-to burger joint that's easy to find anywhere in the US (McDonald's, BK & Wendy's), I don't think there's much question as to who has the best tasting meat in their sandwiches. I may give up some to BK, because that char does something, but when you add in overall menu options, BK quickly fades. I loved my 2 years working at Wendy's overnight. I didn't have a boss in-house. Whatever I did was on me. Keep the place clean & prep every thing so the morning shift is ready to go and the lunch rush shift has ample items to work the menu. It was fun getting done my night at 6am and getting a free breakfast every day. It was dirty. I cleaned both bathrooms and had to scrub all of the floors to make sure any grease residue was not longer visible. White between the bricks was the motto. I had to prep 100 potatoes every night which meant dumping them into a tank, scrubbing each one & then wrapping them in foil. I had to clean out the salad bar. Once the person in charge of it cleared out all the crocks, there's a ton of mess left behind which is on me. I clear out all the remaining ice. Double check the drain that it's not clogged. Rinse out the 15' pan with a sanitized solution and dry everything out with clean rags. At the end of my typical night, I check to see the bathrooms are clean & toilet paper, soap, etc is filled. I check the bricks where customers walk upon and make sure I see white lines between them. No laden grease. I then check the dining room to make sure the carpet's vacuumed and all trash has been taken out. I check the condiment counter to make certain the ketchup pumps and any others are full. Also make sure napkins are in place. Now it's to the front service counter. Check for any trash, etc under the counter. Check the Frosty machines (make sure they're clean and ready to go). Check the coffee brewer's got what it needs - thought coffee never was a priority at Wendy's. Make sure there are at least 100 ready trays w/ a paper liner for people to carry their food (that number is likely reduced by 80% in today's market), and finally, make sure there's starter money in each of the registers. Now back to the kitchen. Check that every cooking unit is on standby and can reach proper temperatures as soon as shift starts. Double-check grease in all fryers (fries, chicken & fish) to see if any need to be replaced. Finally, check soda system to make sure everything's working correctly and that we've got enough syrup & CO2 to keep the system going. That's it in a nutshell. My daily experience (well I guess nightly) working overnights at a Wendy's back in the 80s.

I worked at wendys in my youth and during a lunchrush a beautifully dressed lady was ordering a burger and a shake. As the bloke bought the shake up he slipped on the recently mopped floor and literally ended up throwing the shake all over her. I was on the register at the same time and as the shake was dripping from her head and neck down her dress I said "would you like fires with that?" Comedy gold I kid you not
