I'm an Aussie and my small town has 3 fish and chip shops. The quality varies between shops and even the best sometimes have below average tucker. Overcooked chips and undercooked batter are the worst faults. One thing Aussie chippies do better than any Burger King or Maccas though is hamburgers. An Aussie hamburger with the lot from the local chippie is unbeatable. Chuck in some dimmies and a spring roll and you've got a real feed.

Chicken salt is an immensely popular seasoning in its native Australia, where the Mitani family introduced the product in 1979. Its ingredient list might surprise you: Mitani's chicken salt does not contain actual chicken-rather it's a garlicky seasoning originally intended for rotisserie chickens.
@Mav_F
@Mav_F Жыл бұрын
Mitani Family didn't invent it. They bought it off the inventor and yes it doesn't have Chicken in it. Its named Chicken Salt because it was put on Rotisserie chickens in a Fish and Chip shop in the inventor's shop. I know the story because I am from where it was invented in South Australia Chicken salt was originally developed in the 1970s by Peter Brinkworth in Gawler, South Australia to season chicken for rotisseries. This recipe was purchased by Mitani Group in 1979, and is now commonly used on chips throughout Australia.

We fry our fish at a higher temperature here in Australia than in the UK. It cooks the batter quickly and crispy and seals the fish in. Because the temp is lower in the UK it takes longer to cook and absorbs more oil which makes it seem oilier to the taste.

And the fish in Australia is rubbery and undercooked as a consequence. My local chippy the fish is soft and flakes apart because they fry for 8 minutes. And the batter's not soggy or oily, they've been in business since the 1930s so know how to get it right. Soft, fat chips like they're supposed to be. Hot chips in Australia are dry French fries. Too dry.

fish and chip shops are amazing here in AU. Very quick, cheap, very fresh and flavourful. The chicken salt is more common than standard salt with chips. We also have lots of battered stuff at these stores like crumbed sausages, sweet chilli chicken strips, etc. But one thing you will also see at fish and chip shops is, with the burgers, we always have the option to have it with a slice of beetroot/pineapple. I don't know if it's common in the UK but omg the onion and beetroot go soooo good together. We've even had mcdonalds selling burgers with beetroot, onion, bbq sauce, etc.. the perfect burger lol

Can't have a plain hamburger without beetroot. Any fish & chip shop worth their salt should include beetroot as standard on a plain hamburger, it should not be an optional thing (other than to remove) and especially not an extra charge like some places have the gall to do (which would instantly cause them to lose my business).

The secret to a good batter is, having the oil really hot, if it's not hot enough it will take longer to fry and soak up way more oil and make it soggy and really oily, basically if its hot enough it flash fries, plus there is the type of batter used.

It depends where you go, I'm sure every country has good food shops and bad ones. In Oz it's not hard to find the good shops. In Melbourne we have potato cakes. That's a reasonably thin slice of potato in batter. In New South Wales they have the same thing except they call them potato scallops. First time in Sydney I asked for six scallops meaning the shellfish, but ended up with potato cakes. Then argued with the shop guy that scallops are the shellfish and what he served me was potato cakes. (I got my way eventually) In Sydney a pot of beer which it's called in Melbourne, is called a schooner. There are a few different names for things in the various states. Most of us know what soft drink is, I.e. Coca-Cola/Pepsi is soft drink, however in Tasmania they call it cordial. To Melburnians, cordial is the stuff you mix with water. Cheers mate .

Chicken salt comes from charcoal chicken places where they collect all the drippings and trimmings from charcoal chicken, then they bang all that chicken grease and stuffing and skin flakes and bake it in the oven and mix it in with salt, and pop it in a shaker, and that's chicken salt. Now I don't know of any places that make fresh chicken salt like that anymore, usually just comes from a pre-made tub at the supermarket, but yeah it's really delicious and it's available everywhere and in many cases is the default salt used on chippies.

@MSTV Chicken Salt is like the Chicken flavor on Crisps /Bagged Chips chicken salt is basically as iconic as Salt and Vinegar on Chips or Tomato and BQQ sauce . chicken salt is the seasoning you need in your life and on your snacks. Dudley’s in New York City makes their own chicken salt, starting with actual fresh chicken. After rendering out the chicken skin’s fat in an oven, Dudley’s chef Thomas Lim braises the skin in chicken stock for an hour and some change, then dehydrates the skins in the oven overnight. He then blends the chicken with dehydrated mushroom powder (in case there wasn't enough umami from the chicken, this pushes you over the edge into savory flavor oblivion) two types of salt (kosher and sea), white pepper, garlic powder, and onion powder. Lim sells it by the jar at the deli counter. It is made from ingredients similar to Dudley's. (It contains chicken meat and skin, chicken broth, salt, rosemary extract, salt, paprika, garlic, onion, celery seeds, turmeric, arrowroot, chanterelle mushroom powder, mustard seeds, white pepper, tomato powder, fenugreek seeds, cinnamon, allspice, and ginger, to be specific!) You can buy it easily online at Savory Spice Shop. And you won't regret it.

It is a combination of different spices which became a primary condiment. As far as I know there is no chicken in the salt. There are different brands of Chicken Salt. Where I live (Adelaide) most fish and chip shops will ask you if you want regular salt or chicken salt. I am sure one of us has already mailed some chicken salt to you by the time of my comment. Most of our seafood is local. The size of the portion is about normal for a shop like that one. 😎

Where’s the Flake? As a victorian it was always Flake (gummy shark) and chips…. other fish choices existed but you rarely asked for them. And… I’d never heard of chicken salt until Nandos appeared on the scene, but it is now my go to salt for chips!

Chicken salt gets its name because A gentleman created it to essentially season/marinade rotisserie roast chickens. People loved it, So he put it in a jar and that’s chicken salt. Every takeaway shop has it here and if they don’t they’re a front for money laundering and not a real takeaway shop.

most chicken salt doesn't actually have chicken in it. it was originally designed to season roast chicken.

My wife and I had fish and chips in Devon yeras ago and it was quite tasteless. Our local fish and chip shop is very good, but as with most things, some are better than others. In Australian waters there are scores of different fish caught that would be great to see in our fish and chip shops, but unfortunately most of them get sold overseas, so we end up with only 2 or 3 to choose from; unless you buy it from a fish market to cook for yourself. Chicken salt was invented in Oz, but there is no chicken in it. But I love it.

Chicken salt is a savory seasoning used in Australia and New Zealand, mainly on dishes like french fries and chicken. Despite the name, it doesn't contain chicken but offers a tasty, chicken-like flavor. It's a mix of salt, herbs, spices, and sometimes MSG for that umami kick. It's a popular condiment in these regions, especially at fish and chip shops. Hope this explains it for you my British friend

Grew up in Australia, then lived in London, then Glasgow for a few years in my late 20's. Australian fish and chips definitey feel more gourmet and fresh, for the same price. But, there's something about the sog and dirtiness of UK fish and chips that I also appreciate. Luckily, because we have so many brits here (now that I'm back in Australia), we also have UK style fish and chip shops here, with the standard fish or battered sausage suppers you get in the UK. Both are good, I definitely prefer Australian style, but if you want it you can get a good old fashioned British fish and chips meal here too. Both are good, they're just different.

Most fish and chip shops in Australia serve the fish and chips with slices of lemon so you can squeeze the lemon juice on the fish. That's generally our alternative to vinegar. But yeah, chicken salt is basically that chicken stock concentrate you use to make up chicken stock, mixed with some salt. Very tasty.

That is a newer thing I’ve noticed because as a kid growing up in the 70’s it was always vinegar.

A lot of comments about the origins of chicken salt already; but just to add I buy it online from Amazon so I can enjoy it here in the Highlands (Scotland). As to the chips, a local food truck does Aussie chips that are super crispy on the outside and soft on the inside. I add my own chicken salt of course. I believe also Australian fish shop fry battered fish at higher temperature for shorter amounts of time, so its nowhere near as oily as it is in the UK. Australia has different types of fish. My family used to get flake (a kind of shark), and cod mostly, but if they had any spare cash rather than fish and chips, they'd opt for barramundi. As coastal dwellers, we also had our own crab pots, and prawns were not in short supply either freshly cooked in the pot.

As an Australian, I will confirm chicken salt is a 10 once you've had it. Normal salt is like a 4 I never put normal salt on anything I never buy it i never use it. I only use chicken salt. It is the biggest game changer I've ever had for food. I've never had something that has completely replaced something that I loved.

Agree with the observation that the batter is crispier in Australia than the UK, but I do like UK fish and chips very much. I find the taste and texture of haddock to be unlike anything we have here. There’s also the mushy peas and curry sauce that we don’t get here (except for a British fish and chip shop that I know of here in Brisbane) that I really like about UK fish and chips.

I remember being able to purchase tinned mushy peas, plain or minted, in Australia (Brisbane) growing up, but that may not longer being the case given the introduction of more international cuisines over the years.

If you're curious about the prices, the pound will get you just under two Australian dollars (1.91). So, halve the price on the board and you'll be close enough to converting it to pounds.
