I put basil leaves with my eggplant and layer it. Its really good and lots of Garlic !! Icant wait to try it this way. .green olives and celery, who knew !!!! How yummy I literally crave this its so good !!❤❤❤ oh yeah and the peppers i have a confession I use the red pepper seeds in the bottle😒😒❤❤❤

I also brine the eggplant in salt and it seems the seeds fall right out, I leave overnight then sit them in a wate bath , then rinse... then squeeze the BAJESUS out of them. .wow to bypass the seed dilemma is definitely something im interested in...LOTS OF GARLIC, CHASE THE VAMPIRES AWAY !!! 😂 I LOVE GARLIC. Mmmm ...So my pickled eggplant takes an evening then next day finishing it...I cannot wait to try this way. I love green olives and celery, im vegetarian....😊

I just made this with my last 2 eggplant from the farmers market. Also had some beautiful garlic from the farmers market too. My only change was to use some sunflower oil with my olive oil bc that’s what I had on hand. Excited to try it in about a week. Hope it turns out as good as your mom’s and grandma’s. And a question for you…what are your thoughts about the salting/draining process for eggplant? Do you guys ever do that?

That’s great! We have never salted or eggplant. Never had a problem with bitterness.

Great to hear! My grandmother used to keep them in the basement, which was cool for up to three months. But, they never lasted that long!

This is so good! I made it a long time ago, recipe from my late Aunt. I watch James from Sip & Feast, another New Yorker, and He salts the eggplant to get the water out. Then into the vinegar bath. Thoughts?

Great video but you missed a very important step my friends.. lol... you must first salt the eggplant and let sit overnight to then get all the water out and then squeeze. Once you do that then you blanch for one minute in the water and vinegar. Then squeeze again. But I bet this was still good.

If you purchase the male egg plant it will have little to no seeds.
