@Kallway that Powder name is Sumak/Sumac, you can go to any grocery shop Turkish, Iranian,or Marrekesh/Moroccan shop an ask for Red Sumac, there is also one light in colour, that is from IRAN, very Sour that is 🤤🤤🤤 I hope you get Sumac an u njoy it too 👍🙌🌷

Meat cuts before being sent to the restaurant, are indeed washed. However when cooking, the spices, the heat of cooking etc. makes the meat quite microorganisms free… The cooking methods and style of these Turks are centuries or millenia old.. Nothing to worry.. Not sure about the guy using the lavash to soak up the raw meat juice then using the same lavash to put the cooked meat on to serve to customers.

I also questioned this many times before. Raw is raw and not suited for commercial serving. Your own backyard is a different story 😅
