Considering his moves from 3 and 1 with their respective fist weapons, I think we can say at the point of 3 hes seen exactly 1 Bruce Lee movie. By 4 hes obviously become a fan, and considering how he even imitates sounding like him with King Cerberus in 5 I think its safe to say hes seen every piece of content with Bruce Lee ever to have been produced.

Dante probably watched a lot of Bruce Lee movies as a kid so that influenced his fighting moves and style. Meanwhile, Vergil probably got influenced by samurai movies like Yojimbo and Harakiri since he's fighting style is always wielding the katana. He does change to a similar style to Bruce Lee though when switching to the Beowulf devil arm. Also it's not just Bruce Lee but different fighting styles appear depending on what devil arm Dante and Vergil wields. For example the Balrog weapons gives Dante boxing style like moves and when switching to the kick moves gives him capoeira like moves. As for Vergil the giant sword he wields when he was in his Nelo Angelo form is like a zanbato long sword. His style changes from a samurai like stance to a knight like warrior.
