I built a "racing sim" that looks like an old cruisin USA cabinet and it's so much fun. Playing Daytona at home with a wheel is insane. It's on Xbox 360 and plays on series x in 60fps and has wheel support.

Cool project. I definitely thought about getting some light guns for my machine. On my cabinet, I also put buttons on both sides to play pinball games. Two buttons on each side, one for the flippers, and another one for nudging, and it does the trick pretty well. Of course, that doesn't fit the Sega aesthetic you're going for, but something to consider in the future if you're into those kinds of games.

Ive tried to do a similar "ultimate" concept, but instead using a simpsons 1up arcade cab, a old PC from goodwill and a bunch of diffrent arcade controllers that ive bought/made with velcro to attach them. Its pretty cool, so far i have normal arcade sticks, taiko drums, a spinner, a dual arcade stick controller, and I plan to get a lightgun and trackball controller. However, I also have a racing rig, but i dont use it with my arcade setup. I would highly recommend to use VR with racing games, with them projected onto a virtual screen. Ive been playing a lot of daytona 1 and 2 this way.
