@@jamesgunn5358 It took I think 100 days on the dot, and that was not by design lol. Keep in mind we were working mostly evenings with the occasional 4 hour Saturday session. I could have done it in far less time IF: (1) I would have had all the materials needed up front and didn't have to wait on odds/end items (2) would have utilised more weekends... and (3) wasn't filming the entire process form top to bottom. I should probably add a 4th which is I had no clue what I was doing which is no doubt a silent time variable which I poorly underestimated 😅

Loved the video. You guys did an awesome job. Can't wait to see the finished product !! BTW, did you put a damper in that stack or will you just rely on the fire box damper ?
@MeatNGreetBBQ
@MeatNGreetBBQ Жыл бұрын
Brother your support is truly appreciated! Great question. Is rigged a damper after I cooked in the rig the first few times. The convection was OUT OF THIS WORLD and I realized if I don’t find a way to slow the velocity down, I’d never be able to have elite fire management. So I cut an 8” circle out of some cardboard and traced it onto 1/4” thick steal and cut that out. Then I tacked an 8ft piece of cheap rod laying around to the outer edge of the ‘damper’. I made a little handle at the bottom out of an old horse shoe haha. It’s not perfect but once I did that I was able to dial in my temps and make the smoker do exactly what I wanted.

I finally purchased my propane deposit, a 500 gallon. Probably too big for a first time build, but this is what I could get my hands on here in Spain. It is bigger in diameter and shorter than de ones I see on your videos proportion wise. Nevertheless, the steel is ⅜ of an inch and in great condition. My question is where to join the (insulated) firebox. Should it be on the centre line or below. And if below, how much? Is there like a formula? Thanks so much and I really appreciate your channel. Without any doubt, the best on smoker building. Greetings from Spain
@MeatNGreetBBQ
@MeatNGreetBBQ Жыл бұрын
Huge congrats my friend that’s great news!!! I eyeballed the firebox but believe I set it a few inches below center line. But the firebox throat opening is going to be even lower than that. It’s REALLY hard to explain over message, mostly bc I’m not an expert haha. The best help I can provide is the fire management video I filmed. Sorry that wasn’t much help. Thanks a ton for the support brother, always means a lot!

Awesome video! I’m in the process of building a 250 gallon offset and I’m at the collector build now. Did you think about going with a hinged smoke stack? Also are you going with skids, wheels or trailer mounted to move it around?
@MeatNGreetBBQ
@MeatNGreetBBQ 2 жыл бұрын
Thanks for the support family! I did think about hinging the stack there for a little bit but honest decided not to just due to being dog tired of chasing down materials and I was on a time crunch with the build so had to prioritize some things over other ya know? And we rolled with skids then set on a trailer. I didn’t want to do anything permanent so I decided on trailering the smoker.

There are calculators online to calculate the size the smoke stack should be based on the size of the cooking chamber and firebox. An 18 foot smoke stack means nothing. Cheers!!
@MeatNGreetBBQ
@MeatNGreetBBQ Жыл бұрын
If you’re referencing feldons calculator, then I’m sure you know how brutally OFF that calculations is. Secondly, not quite sure what you mean by “an 18 foot smokestack means nothing” … because smokestack height means everything! Lastly, calculators and opinions (yours and mine) aside. I directly contacted 2 of the largest pit builders out of Texas who provided me their exact smokestack measurements, I also spoke with a former employee of Aaron Franklin who gave me the “rough” height of franklins 500 gallon pits, and last but not least I crossed that with the smokestack height of a 500 gallon primitive pit. Which if you know smokers, then you know the efficacy of a Primitive by JD. All that to say, I’m beyond happy with the performance of mypit and I’m glad I asked real pit builders and pitmasters rather than defaulting to a “online calculator.”
