Just wanted to share that I built an incubator using this one as the model. I couldn't find suitable lamp bases so just got sockets and a friend wired them for me. He also built a little hard plastic box to sit the temperature controller in for me. I haven't made the bamboo racks yet, but in the meantime I am using 30cm knitting needles as rods (which you can just push straight through) and cake cooling racks sit on them very nicely. I can make two rows and probably three really. Thank you so much for doing this video. I was using an aquarium heater set up before this and it was okay but this set up is fantastic!

I did not add the cost of the three bamboo skewer trays in the cost breakdown. They cost me $11 to make and can hold 15 packs of 200-gram tempeh. My other incubator, slightly bigger (60qts) has 4 trays and can hold 20 packs of 300-gram tempeh in one shot.

@@ronzyl1 In fact I am preparing a video on how to make the trays. Also on how to set the temperature controller to 31C (88F) for anyone who is interested in doing it but not sure how to do it. So, wait for the next couple of days for the trays making. Rhizopus is not affected by light apparently. I use two 25-watt bulbs and my incubator works perfectly. I do cover the bulbs with thick paper, but it is not for the light only for direct heat due to the incubator being so compact.

Hi Francius, I'm just starting to build my own incubator and ran into a couple questions. Does rhizopus oligosporus actually need any light? I'd like to save some energy and feel safer by using a heating mat. I'm using the inkbird temperature controller but haven't done the ventilation part. So until now it's basically just a temperature-controlled closed box that I open every 12 hours or so. I already did two test runs with the mycelium starting to grow quickly, but then it slows down significantly and only grows on the surface and doesn't grow densely. I believe it's due to missing ventilation, not due to a lack of light, but I wanna be sure light is not important before I move on with the ventilation as it will influence my "interior design" :D And speaking of ventilation, I know that some myceliums are quite sensitive to CO2 levels and cannot grow well in an environment like a human's sleeping room with little air exchange. I'm thinking about using a CO2 controller to trigger the fans. It's quite expensive and probably not necessary, but I'm just so interested to know how this works....

Hi, Mario! Light is not needed. In Indonesia, people put their tempeh trays in the dark, and they grow well. My incubators all use light bulbs and they work just fine. Any heat source is acceptable as long as they are controllable. If the mycelium doesn't grow well it is not because of no ventilation. The holes in my incubator are for temperature control using the exhaust fans. Traditional tempeh in Indonesia are wrapped in banana leaves completely and they grow. What they need is some perforation for the water vapor from the fermentation process to escape. The mycelium growth is directly affected by the quality or the amount of tempeh starter. Try to increase the dose! Tempeh requirements are simple. No need to control the CO2 level. Controlling the temperature to stay steady at 88F(31C) is extremely important! @@francius1003 Thank you, that's good to know. I guess with light bulbs as a heat source, controlling exhaust heat is even more important compared to a heating mat. So I'll focus on your other suggestions before installing ventilation. I wanna gain a better understanding, so I'll never change more than one parameter before another try. I made my own tempeh starter with the same incubation chamber and tried to replicate your method from the video on tempeh starter. This worked well, and I harvested a clean carpet of grey spores from it, so my setup can't be totally wrong. But I will try my next batch with much more of the tempeh starter and also buy one to compare. During my current run I'm noticing condensation inside the bag. I dried the soy beans for a whole 24 hours before putting them in the bag, even thinking they might be too dry, and I perforated the bag with so many toothpick holes it took me ages. So I should be on the right track, but the condensation doesn't look promising. Or can it be normal?

The condensation is normal. It will go away after 24 hrs of incubation and completely vanishes after 36 hrs. You need to air dry for 30 minutes no more. 24 hrs is way too long! Hi, there! The problem with the reptile incubator is the sensor. It measures the ambient temperature not the tempeh, so it does not know when the tempeh is overheating while the ambient is right. STC-1000 on the other hand, controls the tempeh temperature when you put the sensor on the tempeh so overheating is prevented. You can use any small exhaust fan available around 9cm in diameter. You can check Amazon for such fans. Or, check the laptop cooling fans. They are available everywhere. STC-1000 is available at Amazon, too. The other components are common, nothing special. Hi, Rob! The cooling fan is a regular USB Cooling fan for laptops, it draws air out. That is why we need to have small vent holes at the bottom, so fresh air can get in from bottom and goes up washing the excess heat out.

The largest styrofoam cooler I can find is a 40 qt & it does not have any handles like yours does I can buy that local and save 50.00 shipping as well Does a 40 qt cooler change anything from your instructions? And will it work as good? The function of an incubator is to maintain a stable temperature whatever is inside it. It is not affected by what is inside, whether it is a piece of tempeh or anything else. The probe will read the air temperature and send a signal to the microcomputer to switch the heat source on or off and set the cooling fans on or off accordingly. The tempeh will eventually get to this temperature and ferment. This is true until around 15 hrs of fermenting. After 15 hrs tempeh produces its own heat because of the fermentation process. Even if the heat source is off the temperature can go up. Then, only the fans will try to keep the temperature down. A temperature of 88F or 31C is the fermentation process requirement. Below that the fermentation will not happen, above that the mycelium will get burned. The styrofoam box is only a container that keeps the warm air from escaping. The kind and the size of it don't matter. Use whatever is available. Some of my subscribers use card boxes or even wooden boxes. The cooling pad is the dual fans that function as coolers. Hi, Bel! Good to know you know tempeh from Indonesia, where they are created in the original style. I believe you have a good understanding of what is fact and what is a myth. I built my own chicken incubator long ago, I don't remember how much electrical power it needed. My tempeh incubator needs only a small power for a small time, let's say 50 watts for 15 hrs, and that is all. So you decide. If your chicken incubator can give you a constant temperature of 31C or 88F, then use it as a start. Tempeh doesn't need 21 days of power as chicken eggs do. You don't need to concern about humidity. If you use plastic bags, or banana leaves it is a closed environment, so the humidity will always be taken care of. If you use an open pan system you need to have control over the humidity. I use a wet towel for cover when I use a glass pan for my tempeh so the incubator heat won't dry out the beans. Start small and build up as you progress. Start as a home business for friends and relatives and slowly grow. It is a good business because tempeh is going international Francius

At 2 m 08 seconds when you have that piece to secure the bulb in place, is that just a piece of cardboard you made yourself and put a hole in it? Or do those come with a lamp base? i suspect you made that I am close to having all the parts now mate Since building my own racks like you did is not likely to happen here, can I just use skewers pushed through both sides to make shelves? Or will the holes compromise the heating inside the box? How far down should the 1st shelf go? And if I want a 2nd shef how much space would there be between both shelves and the lights? Cheers

Hi, Priyanti. You can use any rack available. The reason for the bamboo rack is I can make them to fit exactly to the inner measurements and maximize the use of the space. That is the only reason.

@Priyanti Djoehana What you need to check is the temperature control. You need to be able to set the temperature at a constant 31C (88F) automatically. This is the most important. If the thermo-box has this feature you are good to go. Secondly, your tempeh needs humidity of at least 95%. If your tempeh is in plastic bags, you don't need to worry about humidity because it is a closed environment with humidity of almost 100%. But if you are using the open-pan method you need to make sure that your thermo-box can maintain the humidity. Otherwise, the tempeh will become dry and cannot ferment. Good luck. Francius That is not a typical PC fan with motherboard pins What is that called exactly, mate? I was this close to ordering a fan then i realized yours is something different i also cannot find a dual fan like you have,i have to buy 2 USB fans,but that changes the setup as i understan your setup runs off of 1 USB plug How would i account for 2 usb plugs for each fan? Cheers Also, the piece that you used on the inside that goes between the box and the bulb used to secure the lamp base from the inside, did you make yourself? i cannot find a lamp holder with a plate/base like that to secure it in place.Is that a plate/spacer that comes with the lamp base? It seems necessary to keep the base in place? And not to put a warm bulb against the styrofoam,that may be dangerous?

24 liter box seems a bit small. If you can find a bigger box it will be better because you still use the same other components. Using two bulbs will make the heat distribution better. You can use two single fans hookup together. One may not strong enough to draw the overheating out.

I use a double 3" size, but you can use any size. It won't matter because it will be controlled by the micro computer. You can use a bigger single fan too. Please keep in mind the fans are exhaust fans, they draw out the hot air and pull in cool air. Francius

Hello, there! I don't know how good 45 watt LED creates heat. But, from the wattage, I think they are a good heat source. Try one LED first, put it in the middle, and check how it performs. On the distance between the light and the first tray, keep at least 4 inches. Also, put some hard cover over the heat source so it will not send direct heat to the first tray. Good luck trying! Hey Francius! Did you open 3 holes on each bottom side of the box, or only on one of them? 3 in total or 6? My friend made me an incubator like yours today,and i am so excited to try it,but i don't know if made a mistake with the 6 holes he drilled. Also,i know the racks you made are simple,but not easy for me. Do you have any other alternative to share, with minimum to no craftwork at all? Maybe buy something already made? Thanks a lot!

Yes, all 6 holes stay open. They are used to flow in the fresh air in case of overheating and the exhaust fans suck the hot air. The temperature will still be controlled by the STC1000. So no need to worry. For the tray, you can find any steel tray in the market. You must improvise something to support them. Just use your imagination. You can also try instead of wood strips for the tray sides, use thick cardboard glued together. Easy to do. Let me know your progress, email me pictures. My email is on the channel homepage.

Hi, Raissa! Yes, it can. As you see in my video I used my incubator as a dehydrator. It works just perfect. Just remove the container lids. Don't worry about wood or foam as long as it clean. But working with styrofoam is much easier than working with wood. Even you can use cardboard for the box.

Hi, Dennon. The heat probe is part of the STC-1000. It is the black wire that I stick through the lid, near the cooling fan.

The tip of the sensor should be 1-2 cm above the tempeh pack. Do NOT put the tip of the heat sensor at these spots: touching the tempeh, near the heat source, and near the vent holes. They don't represent the average.

Hi, Nat. Yes there is a little difference of temperature but not too much due to the direct light from the lamps. That’s why you need to cover the lamps with thick papers. You also need to rotate the trays after 12 hrs of incubation, take the bottom to the top. I am learning something all the time by reading your replies.That's why I try to read them all Does that mean that no matter what box/heat method I use(even a dehydrator) after 15 hours I need to take the tempeh out of the unit and let it ferment outside the unit till done? Put in an oven with light on? i suspect my house is too cool to just put out in the open Cheers @@francius1003

It is available in almost hardware store. It is a cooler box to store chilled drinks. I bought it from Winco Foods. You can use any styrofoam box. STC 1000 will be connected household electricity, not battery powered.

I missed what the extension cord was for but do you have to attach those wires to the wall charger or can you just plug that part into the extension cord/the outlet? This is so awesome though! I am going to get all of the utensils so I can make this with my boyfriend!

Hi Francuis- are the extraction fans running constantly, or do they just come on when the temperature reaches 31 degrees?

Hi, Matthew! The fans and the heating lights are controlled by the microcomputer STC-1000. When the temperature reaches the set value the fan will be turned on, and the heating light off until it reaches the lower value. The process of on-off of the heating lamps and the fans are automatic, based on the initial settings, usually 31C +/- 0.5 degrees. You can see how to set the values in one of my videos. Francius

The fans is part of the temperature controlling system. When the incubator overheats the lamps switch off and the the fans switch on to remove the heat out and draw fresh air in.

I use a USB exhaust fans, it's very standard. Any small fan will do, the temperature controller will operate it, on or off at the right time.

Hi, there! The thermostat is an integral part of the STC-1000. If you forget to plug it to the microcomputer it will sound a loud alarm. STC has 8 outlet: two for power, two for heater, two for cooler and two for the temperature probe (thermostat). Francius

Hi, Christer. The dimensions of the box will depend on what box is available to you. I used a 15-gallon one. You can use any kind of box, then you measure the inner dimension. In the video on making the tray, I showed you how to take the measurements. You can use a smaller or bigger box, it does not affect the performance of the incubator.

i have given this video a few views trying to memorize it, and because I am not smart at building things Can I please ask what are the dimensions of each fan? My guess is 140mm each? I will have to buy 1 fan that equals the size of those 2 combined because 2 separate fans = 2 USB plugs and your plans only account for one USB plug???? Cheers

Hi, Gabi! Definitely! You can use it for anything else that requires an automatic constant temperature. It is just like your microwave. You don't use it for a certain food only, right? I use it for fermented cassava, even it can function as a food dehydrator! Check out my other video!

No. It is the function of the temperature controller to maintain the incubator temperature regardless of the external temperature.

If you bag the tempeh or wrap it in banana leaves you don't need to worry about humidity because it is a closed environment and the humidity is almost 100%. If it is in an open pan you need to set the humidity to at least 90%.

It’s an exhaust fan. That’s why we need to have some vent holes at the bottom so cool air can get in and flushes out the heat.

If you can't find less wattage that is OK. The microcomputer will take care of it as it will be switched on shorter than if you use 15 or 25 watts because it is hotter. The only concern is the styrofoam box may not stand strong heat, especially if the socket is attached to the box wall.

My suggestion is not to include spices in the tempeh making, it may interfere with the fermentation process. Especially salt is a no-no. Spices should be added during the marinating process before cooking. For some tempeh dishes please look at the other playlist: Cook With Me.

i have just received my STC 1000 and the fans, now I have to get a lift to the store for the other parts This all seems so simple, UNTIL the STC 1000 wiring.
