We are a small country and small nation as a whole, but I feel that we are super underrated in comparison to the other European countries. Unlike them, we have EVERYTHING to offer - good food, culture, some of the oldest history as well as beaches, mountains, forests, rivers, lakes and more! Truly a hidden gem if you ask me (totally not biased at all lol).

Bulgaria is totally underrated I agree. But food? Bulgarian food in my experience is only good when it's totally домашно or home made. The best food I've ever eaten has been in Bulgaria but Bulgarian food quality at restaurants and magazine is normally terrible

Ignorant people repeat the lie that Bulgaria is a small country, when two-thirds of all European countries are smaller than Bulgaria in terms of territory.

I am so glad you liked our food! The cheese is one of my favourite also. Guys you have to definitely try the Shkembe Chorba soup. Add garlic sauce and a bit of spicy pepper. Gonna be probably one of the best soups you have ever tried ,like ever. Love to you from Bulgaria!

Just back from Sofia.. food there is AMAZING!! Been visiting Bulgaria since 1989 so know all the tricks … Skarabar on Benkovski is one of your faves.. mmm mmm mmm🍽️🍽️ owner is a real cool dude!!! You guys had gotta try some some good Rakija too!!?? Назтраве!! 🥃🥃🥃

България няма българска кухня всичко е взето от Tyрската.Българите само се хвалят че българското е най-хубавото но и в другите държави има интересни и вкусни неща.Bulgaria doesn't have Bulgarian cuisine, everything is taken from Turkey. Bulgarians only brag that Bulgarian cuisine is the best, but there are also interesting and delicious things in other countries

As a native from Sofia, I could say that "Skara Bar" is one of the few places that you can still have a good Bulgarian barbecue. I guess, you found the difference between "Skara Bar" and the street food. Good choice!

I don't know why everyone likens boza with beans. But you are right that it tastes like bread because it is made of wheat or barley .with sugar left to fermentate.

Glad you liked the foods you've tried. You should know street food is meant to be prepared and sold fast, it is a business after all. I can say this is not the best example. If you guys find a chance to try out the same foods but homemade, prepared with passion and dedication to the tradition you'll understand what I am talking about. There are still many places you can sit and eat good food though.

I left my country in 2008, and I really miss our Bulgarian Traditional food, especially musala, pulneni shushki, Salat , and even simple plain rice with tomatoes that I use to eat at school ahh and Biskvitena torta, biscuits cake 🎂🎉❤ my kids are bourn in UK but they also like tarator, musaka the banica sus sirene and few other. my kids have visited only 2 times Bg they also love our beautiful sunny beach ⛱️😎❤ I miss it too

Over here in Bulgaria we have two different words for "Cheese". The whiter cheeses, which is more like the feta cheese and the cheese you ate on your salads, we call "Sirene". And, as for the other mostly yellow like cheese such as "Emental" we call "Kashkaval."

the thing is the airan (айрян) is actually made from the Bulgarian traditional yogurt. this yogurt is actually sower and slarty and it's not like the yogurt all other countries know. it's basically a mix of this yogurt, whater and sometimes salt if needed

I've ate "taratur" in Macedonia many times on holydays before when i was young (my mother family is from Skopje and Veles), and in summer when is hot the cold taratur cucumber garlic kiselo mleko with "tavče na gravče" is perfect...

What a nice review and presentation of our traditional street food (although influenced by this and that). As a true Bulgarian I am usually having Italian dishes, recently I experiment with Indian and East Asian food, however your video made me crave for bánitza and kebapche. Thank you so much for the wonderful video! I hope you visit again and explore more.

24:19 this usually (atleast in Bourgas or close) is called Bayganetti. Kashkaval Pane is usually cut in big triangle shapes and you get to taste more of the Kashkaval than the dough.

Bro next time you come to BG, don’t go to Sofia for food maan. You cant talk about quality of the food in the capital. You go to some village near Sofia and ask the first granny you see on the street for banica, mekica, musaka or salad with homemade vegetables then you will see the beauty of our food and nature. If you are lucky granny’s husband will give you rakija to try haha. Cheers!

Like a Bulgarian girl I can say that our traditional food is simple, but with good ingredients combined in a perfect way and this makes it so delicious. There is so much to try but just one stomach 😅

07:36 normally people adding bread and onion and then they mixed and then you are making the form. You can make Kebapche or klufte(meatball - but flat).

So, you guys were mostly in the general area of where I work and live in Sofia. I also frequent that location of skara-bar, and I love that they sell (ridiculously good) ribs by the kilo (45-ish bgn)😅

Also, after having lived and trained as a chef in Germany, when I moved back to Bulgaria and started working here, I was impressed, that even the smallest and also the shittiest places, pretty much everything is either made in house or bought from small(er) Shops, bakeries, veggie-shops, butchers, etc.

You have to drink the yogurt drink while eating the banitsa, drinking it by itself may put you off a little when you try it for the first time, but once you get used to it, you will not be willing to eat your banitsa without it, also it is the best drink to have when it is hot and you are dehydrated.

if you have kidney or. stomach problems the spring hot water is helping a lot, but you cant drink more than 5-10 liters per month because its very "strong" water with big mineralisation

Nice vide! Appriciate all the warm words! Just one thing - mekitza shpuld not be crispy, atleast not so much as one you bought from this particular store. Best mekitza could be found in little villages where cosideeably old people makes them. For foreigners may be mountain huts are best place to have good traditional mekitza. All the best! :)

Very positive, good vibe ppl. Few foreigners consider tarator a soup, especially in all inclusives they dont know what to make of it and use it as a sauce(more so the with garlic variety). Also the boza was a huge surprise, few tourists even consider trying it and even less r actually liking it. Im pretty sure your order was mixed up, probably pointing in the menu, there r exceptions but usually kashkaval pane is in a single block, while the sirene is on bites. As u could see on the pizza kashkaval melts when heated and when paniran(breaded) it got crispy on the outside and chewy to gooey on the inside.

You need to try musaka, supa topcheta( meatball soup), and been soup. Actually cheese is translated sirene in Bulgarian.

You have to try MU Sa Ka. Basically it is a grindet pork meat with tomatoes and potatoes baked in the oven and covered with Egs, Milk, Flour.

We posted in a group called travel Bulgaria on Facebook and she reached out. She doesn’t do tours but she is a local who knows a lot about the history and architecture. We loved that she offered to show us around. I would post in the group and ask if someone can show you around I’m sure there will be quite a few people To respond.

Feta is made from sheep milk I don't think anyone makes banica with sheep cheese.

National Bulgarian foods 😊.Well, in Balkan, everybody has different versions of the same dishes you can find in Bulgaria,Greece, Turkey, Serbien, and even Romania.The recognition as a national food is just a case of variation .Delicious ,fresh, and flavoured food .Enjoy ❤😊

I loved watching your tour guys! By the way, the cold soup "Tarator" is meant to be eaten along with the meat because we feel that eating just bread and any variation of meat to be dry (even though it's sort of juicy) So it makes the whole eating experience a lot more fresh. But you should definitely eat it by itself if you want to feel the different tastes when you are first trying out new foods That goes the same for the "Airqn" with "banitsa", we usually buy it so that no food gets stuck in our throat because of it's natural dryness (even though it's "buttery" :D ) But at the end of all of my explanations, you should know that we don't care about the way people eat our traditional food, it's not like the Italians with their pasta and pizza BUT if you EVER eat a "shkembe chorba" without garlic & vinegar and spicy red pepper, that's considered a crime and you will get a jail sentence for life. But you will probably have toilet trips if you add too much spicy red pepper, so watch out for that :D Usually about 4-7 spoons of garlic & vinegar and for you i would recommend about half a spoon of spicy red pepper if it's a big spoon and probably 1 full spoon if it's a small one When i know i will be at home for the next day, i add like 3 spoons of spicy red pepper but i have to bear the cost of my braveness in the toilet for about a half of my day

Hey guys, very possitive channel, wish you happy travels! As a bulgarian I must say, you should find the best Shkembe soup and just try it. We love it so much there is even a "shkembe guide" site with a map of best and worst shkeme in Bulgaria :D

You need to strongly shake Ayran before you drink it. Its great for washing the Banitsa down your throat. Its indeed a bit unhealthy breakfast cause of the cooking oil but at least there is nothing chemical or lab made inside both the meal and the drink. Its clean and its one of the best breakfasts you can get in Bulgaria on foot when you're on your way to work in the morning but you need to put something in your stomach fast. Good luck and stay safe. 😊

Dunavia cheese is the Bulgarian version of the feta cheese. What you are eating is probably not even Bulgarian White cheese, but cottage cheese which is not exactly cottage but there is no other name for it, In Bulgarian it is called Izvara (Извара). They put it because it's cheaper but still tasty. There are some places where they specify what they put in, whether white cheese or cottage and most of the time when the banitsa is with white cheese it is more expensive.

I loved your reaction after trying the banitsa. About a comment of yours about the airyan, it’s never meant to be sweetly. Nor adding milk nonetheless. Just pure water and maybe some salt. Depends on the taste of the consumer.

That makes sense we didn’t make it just drank some 😂 but we definitely had some that had fruit flavoring and was sweet, maybe from the fruit. The Banitsa was one of our favorite foods ever 😍

Just one fact about cheese it is the Feta cheese actually represents a Bulgarian cheese and it’s a so many variations to make that cheese and the bacteria is called Lactose Bacillus Bulgaris

Tarator is a big thing, also try the airian after some sweating in the heat and when you are really thirsty, then you will understand the power of airian ; ) (actually the power of tarator is in the same conditions)

kashkaval pane - deep fry cheese is my favorite but what you got is .....some kind of funny mistake....that is not at all the dish. usually is flat piece as the palm of hand breaded and fry. not many places make it good. and your pronunciation of our dishes actually is very good.
