You realize how the intelligence and mechanics of the characters in Bully end up destroying the potential of many characters. But in this specific fight, you can notice that the best strategy against any team that has Russel, comes down to focusing on taking down Russel's allies as quickly as possible so that in the end everyone on your team can surround Russel. Derby has a ridiculous habit of just jumping around like a moron, even though he is extremely strong and has, in my opinion, one of the best fighting styles in the game. When his opponent is not focusing on him, he seems to attack even less, so it is good when Russel is beating him, because he defends a lot, allowing Johnny and Edgar to use their brutal blows without Russel being able to avoid them. In addition, Derby also lands some of his beautiful blows when his artificial intelligence does not make him jump around like a kangaroo.
