Thank you for this version of Curry Chicken. I'm glad it doesn't include coconut milk -- just a personal preference. If I were to include more whole veggies, as I found in Malaysia, the addition of a bit of sugar might be considered. All in all, this is a delicious recipe.

The dish looks amazing! I like using boneless thighs and cutting them in small pieces certainly shortens the cooking time. Thanks for the pointer on prepping lemongrass. Now I know. Love cilantro and lime. Can’t wait to try!

Well this is a matter of personal choice, I think 1/2-2/3 pound per person is about the norm but I’ve seen people eat as much as 2 pounds in a single sitting! Not saying I recommend that but it does happen!

Looks amazing. Do you have to use a Dutch over or is normal sauce pan ok? Also wondering adding fresh peppers to bump the heat up...is that traditional?

Hi Michael, you can use other types of pans you just need something with a lid. And yes, this is a very versatile dish so some sliced peppers would definitely go well if you’re looking for heat. The amount of crushed red pepper that I used here provides a little bit but not enough to make this a “spicy” dish.
