Perfect example of mass immigration sucking up the resources and driving up the prices. Notice I didn't say cost. Not that you would understand the difference between the two. There is a missing factor here. Ox tail has been popular and frequently prized with historic American cuisine (and French/Italian/British/etc...) - for those who understand how to prepare it. But it lost popularity (and faded from memory) in American kitchens as it became uncommon to in the grocery store. The modern grocery store does not want to sell dozens of cuts of meat. They are going to sell a few and toss the rest into the grinder to keep things simple (we lost the skilled butcher). This has been an issue with many other cuts that could be prepared into amazing dishes. Economics can really damage culture and society when something is not practical. Yes, ox tail is one of my favorite cuts.

I"m 60 and I've been eating oxtail for as long as I remember. But here in Canada I've noticed that oxtail has been going up in price way before covid . It's been at least 10 years since I last bought it so I'm not blaming it all on covid. IT'S DAM DELICIOUS

Supply and demand is what makes the price. as the video stated oxtail is just a "tiny" section of the butcher meat of the animal its practically a rare delicacy of the animal. you cannot simply make it cheap so who gonna get it? the one who wants it cheap? or the one who wants it now?
