Throw roasted red peppers, onions and carrots and your preferred spices (I do a thai version, a chinese version and a pineapple version as well) into a food processor along with the mayo and vinegar and sugar. Whiz it up. Cut up red and green cabbage into 1/4 inch squares. Throw it all together. You will thank me.

Bison is always a but sweeter regardless of cut. For Bison steaks a simple wine reduction helps balance that while still allowing it to shine.

I've always smoked the brisket trimmings to make smoked tallow for the rap. But, I just watched someone do a brisket ans they cut leg bones and melted the bone marrow and smoked it and used it on the brisket on the wrap. I've heard the bone marrow is actually better than the tallow for flavor. What are your opinions?

bone marrow is better but harder to extract than fat which they have in excess.

Help! I LOVE your channel. I have been watching for a while. I need some help. Every time we get a "brisket" from a custom butcher it has bones in it. It is large and looks NOTHING like what you see in a store, or even what you just pulled off the carcass. No one shows the best way to break that apart. I can't just pull on it the way you did, because it is not on the carcass anymore. Any tips would be greatly appreciated.
