Here’s a delicious Butt Karahi recipe, also known as Mutton Karahi or Desi Murgh Karahi. This traditional Pakistani and North Indian dish is packed with rich flavors, tender meat, and a deliciously spicy, aromatic gravy. You can make this with either mutton (goat meat) or chicken (murgh) depending on your preference!
Ingredients:
For Mutton Karahi:
1 kg mutton (bone-in pieces, preferably from the shoulder or leg)
2 tbsp ginger-garlic paste
2 medium onions (finely sliced)
4-5 tomatoes (blended or finely chopped)
2-3 green chilies (slit)
1/2 cup yogurt
1/4 cup cooking oil or ghee
Fresh coriander leaves (for garnishing)
Salt to taste
Spices for Mutton Karahi:
1 tsp cumin seeds
1 tsp coriander powder
1/2 tsp turmeric powder
1 tbsp red chili powder (adjust to taste)
1 tsp garam masala powder
1 tsp ground black pepper
1 tsp crushed red pepper flakes (optional for extra heat)
1-2 bay leaves
For Chicken Karahi (Desi Murgh Karahi):
1 kg chicken (cut into pieces, bone-in preferred)
2 tbsp ginger-garlic paste
1 onion (finely sliced)
4-5 tomatoes (blended or finely chopped)
2-3 green chilies (slit)
1/4 cup yogurt
1/4 cup oil or ghee
Fresh coriander leaves (for garnishing)
Salt to taste
Spices for Chicken Karahi:
1 tsp cumin seeds
1 tsp coriander powder
1/2 tsp turmeric powder
1 tbsp red chili powder
1 tsp garam masala powder
1 tsp ground black pepper
1-2 bay leaves
Instructions:
Step 1: Prepare the Meat
For Mutton: If using mutton, wash the meat well and pat dry with paper towels. Mutton takes longer to cook than chicken, so ensure you have enough time to cook it thoroughly.
For Chicken: If using chicken, wash and cut into medium-sized pieces.
Step 2: Cook the Meat
Heat the Oil: In a large karahi (or heavy-bottomed pan), heat oil or ghee over medium heat.
Sear the Meat: Add the mutton (or chicken) pieces to the pan and sear them until they are browned on all sides. This will lock in the flavor.
Add Onions and Spices: Add the sliced onions to the pan and sauté until they become soft and translucent. Add cumin seeds, coriander powder, turmeric powder, red chili powder, and salt. Cook for 2-3 minutes until the spices release their fragrance.
Add Ginger-Garlic Paste: Add the ginger-garlic paste and cook for another 2-3 minutes until the raw smell disappears.
Add Tomatoes: Now, add the chopped or blended tomatoes and cook until the oil begins to separate from the masala (spices and tomato mixture). You can also add the green chilies and bay leaves at this stage for extra flavor.
Step 3: Cook the Meat (Continued)
Add Yogurt: Add the yogurt to the pan and mix well. The yogurt will tenderize the meat and add richness to the gravy. Stir and cook for another 5-10 minutes on medium heat.
Simmer: For mutton, cover the pan and cook on low heat for 40-45 minutes or until the meat is tender and cooked through. For chicken, cook for about 20-25 minutes, as it cooks faster.
Add Garam Masala and Black Pepper: After the meat is cooked and the oil separates, sprinkle garam masala powder and ground black pepper over the dish. Stir and cook for another 2 minutes.
Step 4: Finish and Garnish
Check the Gravy: The gravy should be thick and rich, coating the meat. If it’s too thick, you can add a little water to adjust the consistency.
Garnish: Garnish the karahi with freshly chopped coriander leaves and slit green chilies.
Optional: For a smoky flavor, you can also do the dhungar method by heating a piece of coal until it’s red-hot, placing it in a small bowl, adding ghee or oil on top, and covering the karahi for a few minutes.
Step 5: Serve
Serve your Mutton Karahi or Chicken Karahi with naan, roti, or rice. This dish is rich, spicy, and full of flavor, making it a perfect main course for a hearty meal!
