If you have a good cut of meat you really only need salt and pepper, you don’t need to hide the flavour. That said, I like all sorts of seasonings and like to change things up. There’s more ways than one to flavour your food. And good fresh ingredients don’t need much.

It actually does... But the video "teaches" it wrong... The rumpsteak has a thick layer of fat that covers it. When you turn it inside out, you get that fat on the inside and it gives a moist and tender effect when baking the rumpsteak... But they removed the fat in this video ruining the purpose of the maneuver!
