If its a none auto then how do you know your getting your card back in a group submission? What if you are submitting a base Antman and there are 10 more of the same in the group how do you know yours is the 10 and they don't swap you a 9?

Ideally if the only goal is for maximum profit you keep the card until year 2/3 when the player starts making his first allstar team and whatnot. But the goal for these guys in the video is to make quick flips so for them selling as soon as they grade (which will coincide with ROY results and right before better products release) is best.

do you use different sleeves or card savers for thicker cards?

For the card savers - they fit some of the thicker cards depending on the size. For sleeves, "thick card sleeves" are written on the packaging for the thicker cards!
