The main difference is that the fat PS5 comes with 667GB of usable SSD storage after accounting for system software and other data, while the PS5 slim comes with around 825GB of usable storage- A reasonable upgrade if you ask me, also not including the slimmer size and overall cleaned up design compared to the original.
