I've been learning about meats and how to cook them in my retirement. One that I try to buy when it's on sale is the chuckeye steak, which I like to marinade to soften it and add flavor, then cook on the grill. But I like all the steaks. Thanks for your channel.

Thanks for the lesson. With people like you and the Bearded Butchers and others, I've learned a helluva lot!. I am fortunate to be near a local butcher's shop who processes locally raised animals for their stores. It is expensive though. Costco has become a less expensive alternative at times. Sadly, the big grocers don't actually cut their own meat. Most don't have a case. It's all just commodity boxed meat and forget getting anything "exotic" or even getting questions answered.

A great refresher on Steaks. I'm definitely a huge fan of the Bone in Ribeye. I have the Masterbuilt Gravity Series 1050 and cook everything on that. I've recently tried the Picanah, and that was a delicious cut of beef. I've seen different cooking methods for this as well as the tri-tip for cooking to a medium rare, but also to 203 internal temp. Do you have a preferred method for cooking these?

I like tri tip both ways actually! I would probably rather have it medium rare but it makes a great substitute for brisket when you don't want to cook one.

I love flat iron steaks. Of course I like ribeyes, and NY strips. Yet on my meager budget they are not usually on my menu. A flat iron though, rivals them in flavor and texture, yet a much better price per pound. You see the rule is with beef steak cuts; The more you pay the less you chew, the less you pay the more you chew. However, a Flat Iron breaks that rule, it is the rebel, the bad boy rule breaker. It is both tender and affordable. Has great flavor too. It is also is cut from the chuck which is usually known for tougher cuts, so another rule the flat iron breaks. The only draw back to a flat iron is that they are usually cut quite thin. Still, I love them for the flavor, texture and price. I like your categories of “grilling steaks” and “family steaks”. With the exception of the rule breaking flat iron. My personal categorization has always been grilling steaks and gravy steaks. With the sirloin being in the middle, an either-or cut. If it’s More expensive than sirloin grill it medium rare or too your liking. Less expensive than a sirloin it’s a gravy steak, sear them and braise them in a skillet smothered in gravy for half an hour or more till they are fall apart tender like a roast and serve with or over mashed potatoes or rice. Probably because I’m from the south, we like gravy! Good video Susie.

Ribeye is up there, but for flavor and tenderness there is a butcher in Tucson, AZ that makes what is called "Ugly Steaks". If you get the chance to get them and grill them up, you will be in steak heaven.

I’m with ya!! We raised beef growing up. Always a little brain everyday. Our butcher always complimented us on our beef. Just as healthy. Just make sure the grains are non gmo

Not a fan of greasy ribeye. I'll go with a NY Strip any day. But tri-tip and picanha cooked like a roast on the grill, reverse sear and sliced family style is a sure thing. And yes, you can cook these things on many types of equipment, but good beef deserves charcoal.

Please don't take offense, but I've never understood why people say against the grain. It's across the grain vs with the grain. Think of a river...it has a current (the grain) and to get to the other side, you go across the current. To go down or up the river, you go with the current or against the current but since meat grain has no movement, with and against the grain mean the same thing. 😁

The dictionary defines against as, “in opposition to.” Meaning that you’re cutting in opposition to the grain. Besides if we’re nit picking words, I cross the river, not the current. However, both terms across the grain and against the grain are technically correct in this application. That’s why people say it.
