That is a great and I remember my first time eating some while stationed at Barksdale AFB, in Bossier City, Louisiana and a friend and his wife cooked up a large meal for the guys in our squadron who had never eaten any gumbo before. We had plenty of food, and everyone was full, and happy with the meal.

Okay, my friend, everyone has their own gumbo recipe. For me, the true SW Louisiana gumbo goes like this: When your roux gets to the right color, you stop the cooking with ice-cold green and white onions. You add the meat (shrimp, chicken, or smoked CAJUN sausage), red and black pepper, and THAT is it. No additional ingredients. I'm a Mahatma Rice guy. My big brothers love potato salad in theirs, not me. Just gumbo and rice, But there are MANY variations to gumbo, and it seems the farther east you go along I-10 to New Orleans, the more ingredients they throw in. But to me, the basic recipe I gave above is absolutely the most traditional, and the most enjoyable, gumbo that there is, but then again, it is the gumbo I grew up with. But, Sir, a VERY good video!!!!

Donald, I like the way you're living my friend. I'm from east Tennesse but I'm known as the guy who can cook some good cajun food up in my part of the hills. I guess it's because I like it so much. I wanted to ask you about your roux, I use butter and flour instead of oil, Have you tried butter and is there a reason you don't like it? I was also considering using some bacon grease to make a roux, what's your thoughts? Thanks for your videos, I really enjoy them.......10ga

my momma makes chicken gumbo that she learned from my dad's mom, yes my dad is cajun. Mom always made it the first snow of the season. Dad always knew what he was having dinner that day...lol. We put vinegar in ours at the table to spice it up some. I need momma to teach me how she makes it. We are from south Louisiana, so our roux is dark.

We add the okra after the meat goes back in the pot. The longer you cook the okra the more it’ll break down so you kind of have to time it to your liking. There are probably as many different ways to do it as there are cooks. : ) …..Donald

@webcajun Well, yeah!!! But in the Lafayette area we there is a difference between gratain and gradou...gradou id the crud at the bottom of the pot that makes the gravy...My Mon mon always said gradou means crud. And heres a hint at where we come from...we use the word fon fon...

great video! The knife you used is it a wusthof? I was introduced Tony Chacheres creole seasoning when I lived around st louis by a tenant of mine from New Orleans, he used to make gumbo but never had shown me how and then passed away. Do you ever use okra in your gumbo?

after research, i didnt realize there is a difference between cajun and creole cooking a gumbo.....cajun using a roux and creole using okra to thickin the stew.....ive always used okra....i will try this with a roux.....i hope this answers some of the questions you are gettin on your text comments....great job...

The knife was a gift from a friend of mine in Texas so I don’t know what kind it is only that it’s real good quality and does a great job. Yes I do add okra to the gumbo, just not every time. Okra is optional, not necessarily a must have…..Donald

I add about 2/3 of my okra while everything is cooking down. When everything is nearly done I add the other 1/3. The previous 2/3 will cook down and thickens it up just a tad. The last 1/3 is there for taste and so you see it's in there. That's how I do MY gumbo.

You sure can use deer. We make gumbos using duck, squirrel, dove, quail seafood, with or without okra, also a combination of any of the above. Don't forget the Roux........ Donald

will have to try this, many moons ago I worked in a restaurant the owner was from the south, we made a roux to use for various dishes but a bit different than yours, yours looks quite good! Will have to give this a try... You do anything special or eat frog legs??

He cooks his pretty close to how i cook mine. Only difference is a peel the chicken meat off before putting it in there to keep the bones out of it. Also enjoy it with the chicken and some fresh gulf shrimp and blue crab legs in it...
