Recipe 1:
2 eggs.
1/2 cup sugar (120 g).
3 tablespoons cornstarch (45 g).
1 teaspoon of vanilla essence.
2.5 cups milk (600 ml / 20 fl oz).
Bring to the boil while stirring constantly.
Cover with plastic wrap and let cool to room temperature.
2/5 cup water (100 ml / 3.4 fl oz).
2/5 cup milk (100 ml / 3.4 fl oz).
1 teaspoon of sugar.
A pinch of salt.
80 g butter.
Heat until the butter melts.
When the mixture starts to boil, add 4/5 parts of a cup of flour (120 g).
Cook for another 2 minutes, stirring constantly.
Let cool for 5 minutes.
The last time I baked this cake, I paid careful attention to the proportions of the ingredients.
To achieve a good result, it is important to pay attention to the measurements of the ingredients.
4 eggs.
We need exactly 180 ml of beaten egg.
We reserve the rest of the eggs for later use.
Gradually add the beaten eggs until fully incorporated.
At first glance it may seem difficult, but with perseverance it will integrate perfectly in the end.
This is the consistency we are looking for. When you form a channel with the spoon, the edges come back together very slowly.
I draw a circle on the baking paper and then turn it over.
We use the leftover beaten egg to paint the dough.
Some raw almond slices can be a good decoration for this cake.
Bake in a preheated oven at 180 °C for 35 minutes, then let the dough rest for 10 minutes with the oven turned off and the door open 2.5 cm.
1 cup mascarpone cheese (250 g).
1 teaspoon of cocoa powder.

Powdered sugar 90 gr / 3 oz.
